12 Days Of Christmas Cookies: Peanut Butter Brownie Bites

Okay, so technically not a cookie. :)

However, these need to be added to your Christmas Cookie list.  Not only are they the perfect size, (2 bites) if you are whipping up a few cookie platters/plates to deliver to friends and family over the holidays… These Peanut Butter Brownie Bites look fabulous presentation wise.

Not only do they look great, but they are super easy to make.

All you need is 1 box of brownie mix and 24 peanut butter cups.  Luckily I was able to barter with my neighbor Girly Girl to get some (she needed Hershey Kisses… I needed peanut butter cups).

Line a mini muffin pan with mini muffin pan paper liners.  Using a 1 tablespoon cookie scoop carefully scoop your brownie batter into the cups.  Bake according to the directions on the box.  Let brownies cool 5 minutes and then carefully insert 1 unwrapped peanut butter cup into the cent of the brownie.

That’s it!!

* I was able to make 48 mini brownies using a box of standard (and free) brownie mix.
