Mennonites rock. Not only do they know how to cook, their recipe books are right up my alley. Each time I have made a recipe from the Mennonite Community Cookbook, I’m like WOW… that was easy. The directions are short, clear and direct. No fluff. I heart this book.
Another thing I heart is this recipe. I was able to whip this baby up in less than 5 minutes, pop it in the oven, go outside, collect the mail, feed the chickens and vacuum my house in the time it took to bake.
Before I knew it, my kitchen smelled like an apple cinnamon bomb went off.
Another great part about this recipe, is arranging the apple slices. It’s great therapy if you have OCD.
Make this coffee cake. Trust me. It’s totally worth it.

Filling & Topping
1/2 cup Brown sugar
2 teaspoons Cinnamon
2 tablespoons Flour
2 tablespoons Melted butter
1 sliced Tart apple
Coffee Cake Batter
1 1/2 cups Sifted all-purpose flour
3 teaspoons Baking powder
1/4 teaspoon Salt
3/4 Sugar
1/4 Shortening {I used Crisco}
1 Egg
1/2 cup Milk
For the batter…Combine dry ingredients with shortening. Add egg & milk and beat until smooth. Spread half the batter in to a greased 8″ round pan. Cover with apple slices and sprinkle half of filling & topping mixture. Add the other half of batter and sprinkle remaining filling. Bake at 375º for 25 minutes. Cool.Slice.Enjoy.
