Fresh Corn Recipes – Corn Pancakes

Yesterday I made Monkey Boy and The Girl some fresh corn pancakes for their after school snack.  We all know kids love pancakes, but did you know they {or at least mine} love corn pancakes too? Have you tried these before?  If not, you should, because corn pancakes rule.  Plus you can serve them for dinner too!  Yee-Haw!

Ingredients
2 cup fresh corn kernels
1 cup flour
4 teaspoons baking powder
1 tablespoon sugar
3/4 cup milk {I used 2%}
2 eggs
butter for the griddle

Directions

Place 1 cup corn kernels, the milk, eggs, salt and flour in a blender and give it a whirl until the batter is smooth.  Fold in remaining 1 cup of corn kernels.

You can use a regular pan to cook these pancakes up or a pancake griddle/grill.  I cook mine on a griddle because I am a freak and like to see 6 little pancakes all lined up n a pretty row.  But if you are the 1 pancake per pan kind of person, that’s totally okay too.

Okay, back to the recipe.

Butter your grill, pan or griddle.

Pour 1/2 cup servings of batter on to the grill and cook like you would pancakes.

Serve with maple syrup or sour cream.

Wrap the leftovers in the refrigerator for a late night snack.

    Years ago I saw a similar recipe but it used rosemary too. I usually serve them with bacon! Yum!

    Aw, I thought these were going to be like pancakes with whole kernels in. That sounded good to me. Have you come across anything like that?

    I make something similar but I omit the sugar. I serve them with slow oven roasted tomatoes, arugula, bacon and garlic aioli.

    A perfect brunch.

    I guess I should have guessed from the picture, but I didn’t realize how the corn would fly all over my counters when I was cutting it off.
    I got it ready for the morning, and since its so late right now, I got the giggles.

    Oh My Stars Mavis! I made these this morning and my hubby downed four and my 15 month old little man tried to eat all of hubby’s. Now that he’s out the door to work I am frying up some bacon for my plate…Thanks for sharing!

    Just made these for an after-school, pre-gymnastics team snack for my boys. I had to use a little extra milk to get my crappy blender to mix it all, but we like our pancake batter a little runnier, so it worked out well. Delicious! It actually made more than I thought it would, so we have a few left over for breakfast, too (or maybe a late snack for me!).

    Found this recipe while looking for your oatmeal waffle recipe. Since my hubbie is gluten free, I modified the recipe and subbed 1 cup of white rice flour for the regular flour. And didn’t fold in the 2nd cup of kernels since my young kiddos can get picky. It was a HUGE hit! Best pancake recipe I’ve ever made! Everyone gobbled them up.
