Easy Sunday Brunch Recipes – Baked Oatmeal with Blueberries

Before I left for my trip to Atlanta, I made a batch of my friend Jane’s Baked Oatmeal so the HH and kids could warm it up for a hot breakfast while I was gone.  Normally this is something I like to serve on Sunday mornings, but I wanted to leave behind a refrigerator full of home baked goodness before I left.  Basically, I didn’t want to have to worry about the HH feeding the kids weenies and canned corn while I was gone.

The best part about this baked oatmeal, {besides it so tastes awesome}  is that  it’s good for you, and baked oatmeal can last several days in the refrigerator, not that it will, but still, it’s good to know.

Here is the recipe.

Ingredients

1 1/4 cup brown sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp cinnamon
2 Tbs butter, melted
3 eggs
1 1/2 cups milk {I used 2%}
4 1/2 cups rolled oats {NOT quick oats]
1 cup fruit, fresh or frozen {I used frozen blueberries}

Directions

Preheat oven to 350 degrees.

Whisk together the milk, eggs and melted butter and set aside.  Using a large bowl, incorporate all the dried ingredients, then stir in the milk mixture, and finally fold in the fruit. Spread into a greased 8×8 inch baking dish and bake at 350 degrees for 25-30 minutes, until the edges begin to brown.   Be careful not to over bake.

Serve warm. {I like to add a bit of milk to mine.}
