Last week when we received a head of cauliflower in our reclaimed produce box, it took me a few minutes to figure out what I was going to do with it. Luckily I had been cleaning out the spice cupboard earlier that day and the curry container was still out on the counter. Weeee! I love when stuff like that happens.

This recipe for roasted cauliflower curry is awesome. You should try it.

Ingredients

1 head of cauliflower, cut into small florets
3 cloves of garlic, minced
2 Tablespoons olive oil
1 teaspoon curry powder
3/4 teaspoon salt
1/4 teaspoon ground pepper

Directions

Preheat oven to 400°F.

Chop cauliflower into florets and steam until tender. Place the softened cauliflower and all the ingredients on to a baking sheet and toss with garlic, olive oil, curry powder and salt and pepper.

Roast for 20 minutes {give the pan a shake every 5 minutes or so} until lightly browned. Serve warm.

    We roast our with olive oil and garlic then shave some parmesan cheese on it and its great. I can’t wait to try out your recipe!
