    Your picture today reflects how I feel too. Banana squash I have no idea. I’m sure one of your other more creative friends will leave you options for that squash. I grew a few new varieties of squash last year now the challenge…what to do with the darn things! Good Morning.

    Roasted, pureed banana squash makes fabulous “pumpkin” pie, or can be used in any recipe using canned pumpkin. I’ve made soups, breads, cookies, etc and they’ve all been wonderful.

    Try banana squash nut bread
    If you google you should find a recipe and lots of other recipes.
    I belong to a produce co-op and that is what I do with unusual items
    I have a salad savoy I need to find recipes for today

    Cut the banana squash in half, clean out the seeds, cut each half into about 4 pieces then bake at 350 degrees for about 45 minutes. It will be soft when it is done. Cut off the skin, mash with butter, salt and pepper. One of my favorite comfort foods. Or you could trade it to me for ???

    Hi Mavis. I’m new to your site and you are an inspiration. I love cooking and gardening and you have really motivated me to get organized. I too grow a large vegetable garden and have hundreds of flowers. The other day I organized all my seed packets and decided what I’m going to grow this year. I would like to motivate my whole neighborhood to grow gardens and help each other out. I also live in the Poerland Oregon suburbs but on the southeast side which is warmer. I have a pop up greenhouse that I grow all my starts in and it works great.

    About that squash. I love roasted squash that I cut up into cubes mix with olive oil, garlic, thyme, salt, and a little red pepper flakes. Bake at 425 F for 40 minutes. This is also really good with sweet potatoes.

        Thanks. We love sweet potatoes like this. I also line my sheet pan with parchment paper so they don’t stick as bad.
