Quinoa Salad with Cranberries, Spinach and Feta

Because I was out playing in the garden all day today I whipped up a bowl of this Quinoa Salad with Cranberries, Spinach and Feta for dinner tonight. I don’t know what it is about the combination of these flavors, but I sure do love this salad.

Ingredients

2 cups Quinoa
4 cups Chicken stock
4 oz Feta cheese crumbles
2 cups Fresh spinach, chopped
1 cup Cranberries
1/3 cup Ken’s Steakhouse Balsamic and Honey Salad Dressing

Directions

Place the quinoa and chicken stock in a rice cooker, turn it on and cook.
Let Quinoa cool 1 hour and place in a large bowl.
Add spinach, cranberries, feta to cooled quinoa and mix well.
Add dressing and stir to coat.

Hi Mavis, This is not related to your quinoa recipe (though it looks amazing) . . . but I received a catalog from “Gardens Alive!” today (GardensAlive.com) – and it included a $25 coupon to try their products absolutely FREE. No minimum either – it just says “if your total order is less than $25, you’ll get your order FREE.” Since I know how much you love free gardening supplies, I thought I’d let you know. There is no promo code or anything, just the actual coupon that says it should be clipped and included in the order. But who the heck orders anything that way anymore? Since they have a website, you could probably find out how to get the discount by ordering online. Or call them at 513-354-1482 and maybe they’ll send you the coupon. Worth checking out!
    Cheers,
    Kate
