St. Patrick’s Day Recipe – Guinness Beef Stew

Did I ever tell you the Handsome Husband is Irish? Well one of his favorite soups is Guinness Beef Stew. This classic stew is great to serve anytime of year, but especially on St. Patrick’s day with a chuck of Irish Soda Bread for dinner.
I’ve tweaked this recipe over the years, and this one is my favorite. I hope you like it.
Ingredients
2 lbs beef tips, cut into 1″ chunks
1 pound potatoes, chopped
3 large carrots, sliced 1″ thick
1 yellow onion, chopped
1 teaspoon salt
1 teaspoon ground pepper
6 cups beef broth
1 cup Guinness Stout
5+ tablespoons Olive Oil {I use Zoe}

Directions
Saute beef, carrots, potatoes and onions in olive oil over medium heat until nicely browned. Add Guinness, beef broth and simmer soup for 2 hours, stirring occasionally. Remove from heat and serve.

Have you ever tried this in the crockpot?
No, but I’m sure it would be fine.
My HH is also Irish, so I knew I’d have to try it. Made it tonight in the crockpot – he LOVED it! (so did I!) Thanks for the great recipe.
How long did it cook in the crock? I would love to start early in the day and have ready for dinner time.
Yum Yum!!! With 8 inches of new snow today, this soup sounded like just the ticket and it was. I used deer stew meat and it turned out wonderfully. I didn’t have any Guinness on hand and wasn’t going out to buy any. So, I used a bottle of Blue Moon, a much lighter ale. This soup is definitely on the make again list. The kitchen smelled divine–soup simmering on the stove and bread in the bread machine. Thanks, Mavis!
The smell is the best ins’t it? Yum Yum Yum!
Just a quick question before I put this all together…how many does this serve? We’re having friends over for dinner and I’m making this and I just want to make sure I have enough for LEFTOVERS
6-8 depending on serving sizes.
Dear Mavis–
My husband thanks you from the bottom of his heart. He’s not Irish, but he sure does like this recipe.

Wahooooo! I’m glad he liked it. Anne are you in New Hampshire by any chance? I can’t remember if your husband is the Fire Fighter.
