Chicken Tortilla Casserole

If you have some extra chips leftover from your Superbowl party this easy peasy chicken tortilla casserole is a great way to use them up. My husband especially loved this recipe and wanted to know when I’d be making it again. ;)

Chicken Tortilla Casserole

Ingredients

1 1/2 cups crumbled tortilla chips
2 cups cooked chicken, shredded
1 can {15 ounces} corn
1 can {15 ounces} black beans, drained and rinsed
1 cup chopped green or red peppers
3/4 cup salsa
1/2 cup black olives, pitted and chopped
1 cup cheddar cheese, shredded

Chicken Tortilla Casserole

Directions

Preheat oven to 350 degrees.
Grease an 9×9 baking dish {I used butter} and add 3/4 cup crushed tortilla chips. Set aside. In a large bowl mix together the chicken, corn, black beans, peppers, salsa, olives and 1/2 cup shredded cheese.

Pour half of the chicken mixture over the tortilla chips. Add a second layer of chips and pour the remaining chicken mixture over the chips. Top with 1/2 cup shredded cheese and bake at 350 degrees for 30 minutes.

Serve warm.

Have you ever made something for dinner and you were like, why didn’t I think of this before, this is the tastiest thing I’ve ever made?    And why is it that the most simple recipes are always the best ones?

This recipe for Crock Pot chicken with Orange Marmalade is so moist and tasty, your peeps will be asking for seconds {mine did!}. Oh, and did I mention it will take you like 62 seconds to throw together? Yep. Tasty and quick, that’s how I roll.

Easy Crock Pot Recipes - Chicken  Orange Marmalade

Ingredients

4 boneless, skinless chicken breasts
1 cup orange marmalade jam
1/4 cup water

Directions

Place chicken in the bottom of a crock pot, pour 1/4 cup water over chicken and add marmalade. Cook on low for 5 hours or high for 3 hours.

Serve with rice or your favorite vegetables.

Slow Cooker Quinoa Chicken Chili

Looking for something to toss in the crock pot this weekend? This recipe for slow cooker Quinoa Chicken Chili is out of this world delicious. And it’s filling too.

I made it for the HH the other night and he liked it so much, I’m making another batch so he can bring some to work for lunch. This recipe rocks!

Slow Cooker Quinoa Chicken Chili

Ingredients

2 large boneless skinless chicken breasts {I use Zaycon chicken}
2 {14.5 ounce} cans of diced tomatoes
1 {15 ounce} can of black beans, rinsed and drained
1 (15 ounce} can of pinto beans, rinsed and drained
2 cups frozen corn
3 cups chicken broth
2 teaspoons cloves garlic, minced
1 medium onion, chopped
2 teaspoons cumin
1/2 teaspoon red pepper flakes
2 teaspoons chili powder
1 cup of quinoa, rinsed

Instructions

Place all your ingredients in a slow cooker, stir and cook on low for 8 hours or high for 4 hours. Right before you serve, remove the chicken from the slow cooker, and shred it with two forks. Place it back in the slow cooker for a few minutes before serving.

Top with sour cream, guacamole or shredded cheese. Yum-O!

Freezer Meal Chicken Broccoli Alfredo

Since the kids have been back in school, my freezer meals, my crock pot and I have been practically been joined at the hip.

Why have I not been doing this for years? Holy time saver, Batman! Especially if you have to drive your kids all over timbuck2 and back for sports practice and games everyday after school. Seriously, being able to make dinner ahead of time is awesome.

Wanna know what else is awesome? This recipe. Only 4 ingredients and it’s delicious. YUM-O-YUM!

Freezer Meals - Chicken Broccoli Alfredo

Ingredients

3 large chicken breasts {I used Zaycon chicken}
2 {16 oz} jars Alfredo sauce
1 {16 oz} bag frozen broccoli florets
1 {4 oz} can sliced mushrooms, drained

Directions

Load all the ingredients into a gallon sized Ziploc bag, mix, lay flat, label and freeze.

Crock Pot Cooking Method: Cook from frozen on low for 6 hours or until chicken is thoroughly cooked, or thaw overnight in the refrigerator overnight and cook on low for 4 hours or until chicken is thoroughly cooked.

Oven Cooking Method: Thaw overnight in the refrigerator. Cook at 350 degrees for 50-60 minutes or until chicken is cooked thoroughly.

Easy Slow Cooker Meals - Zesty Italian Chicken

It will take you longer to get your crock pot out of the cupboard than it will for you to put this recipe together. And it’s good. Really, really good. Did I mention it’s easy? Yep, it is. All you need are a few chicken breasts, a bottle of Italian dressing and handful of Parmesan cheese and you’ve got dinner made in about 30 seconds flat.

Easy Slow Cooker Meals - Zesty Italian Chicken

Ingredients

4 chicken boneless, skinless chicken breasts cut into chunks {I use Zaycon chicken}
1 16 ounce bottle Italian Dressing
1/3 cup Parmesan Cheese, shredded

Directions

Place chicken in the bottom of your slow cooker and pour dressing over the chicken. Sprinkle Parmesan cheese on top and cook for 8 hours on low or 4 hours on high. Serve over a cooked noodles or rice {and a little extra sauce from the slow cooker}.

How easy was that? Seriously, this is good!!!

Salmonella Outbreak in Foster Farms Chicken Could Lead to Factory Shutdowns

Apparently, due to an antibiotic resistant strain of salmonella in chickens {Salmonella Heidelberg}, the USDA may shutdown 3 of 4 Foster Farms Chicken operations.  In an NPR article I read, Foster Farms must get their plan of attack to the USDA by today.

According to the article, the strain of salmonella is likely antibiotic resistant due to the antibiotics given to birds, for the most part to encourage growth. Foster Farms does not use antibiotics for the purpose of growth promotion, but most chicken companies routinely give antibiotics to healthy animals to promote growth: “As a result, bacteria become resistant to these overused antibiotics.”

The outbreak has effected 278 people, and hospitalized 42% of those people. 53 of those people were confirmed to have eaten Foster Farms Chicken. Yikes!

I’ve always been happy with the Foster Farms chicken I have bought in the past, especially the whole chickens I use for roasting.

“On October 8, 2013, the FSIS reassured the public that: “Foster Farms chicken is safe to eat but as with all raw chicken, consumers must use proper preparation, handling and cooking practices.”

Please know that establishment or plant code numbers only indicate the locations where FSIS is pursuing further testing. These plant numbers are not associated with any product recall; nor specific products. Further, Foster Farms has already implemented additional controls with these plants to fully ensure safety.” Foster Farms

So, what do you think, should Foster Farms get shut down until they can get the problem under control?  Should they recall their chicken?

Easy Crock Pot Recipes Mushroom Chicken

Awhile back I bartered with my neighbor Francisco and one of the items we traded was a can of cream of mushroom soup. In all my life I think I have purchased maybe 2 cans of cream of mushroom soup, so I wasn’t exactly sure what to do with it.

Then I looked in one of my favorite cookbooks Fix-It And Forget and found a recipe for mushroom chicken. Everyone loved it. Even me, and I don’t really care for mushrooms. I don’t know about you, but I LOVE my crock pot.

Here is the recipe:

Easy Crock Pot Recipes - Mushroom Chicken

Ingredients

4 boneless, skinless chicken breasts
1 {10 1/2 oz} can Cream of Mushroom Soup
1 {7 oz} can sliced mushrooms, drained
1/4 cup chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper

Directions

Place chicken in the bottom of a crock pot, and add salt and pepper. Pour chicken broth, cream of mushroom soup over the chicken and then pour the mushrooms over the top. Cook on low for 6 hours or high for 3-4 hours.

Serve with rice or your favorite vegetables.

USDA Is Going to Allow China to Process Chickens for U.S. Consumption

So, while surfing the net in an effort to stay relevant {okay, really, just to pass the time, but it seems so much more sophisticated to say: “stay relevant”}, I came across an article on Yahoo about the USDA allowing U.S. grown chickens to be shipped to China, processed, and then shipped back to the U.S. for consumption.

The article states that the  USDA has made assurances that they will make sure the process is 100% safe {imagine me rolling my eyes right now}.  In addition, the USDA plans on doing 100% testing on poultry shipped back from China.

Here’s the thing:  First, why do we need to send our food across the world to be processed and then back again to be consumed?  That seems crazy.   Second, as the article points out, if  ”we can’t safely leave chicken out for the length of a family picnic, how can it be shipped halfway around the world and back with no ill effects?”  Good point, Yahoo, good point.  Third, is labor so cheap in China that it is worth the resources to ship the chickens across the pond, process them, ship them back, and still offer them to the American public for $2.00/lb?

The whole article kind of left me shocked.  Am I the only one concerned about this?

The Baby Chickens Have Arrived!

Over the weekend The Girl Who Thinks She’s a Bird and I headed to the feed store and picked up 8 day old baby chicks for fall. When we brought them home Lucy flipped out!

She LOVES chickens, and especially baby chicks. When brought baby chicks home earlier this spring she sat outside of their little chicken yard every chance she got and watched them for hours. It was the sweetest thing ever, so you can imagine how excited she was to see the new flock.

We picked up 8 chicks. 4 for us and 4 for Girly Girl’s kiddos. We haven’t named them yet because we are still waiting for her kids to choose which ones they want.

Girly Girl has a larger dog, 2 cats and a toddler so she is afraid to raise baby chicks. We told her we’d be happy to raise her chicks until they are about 8-10 weeks old and then bring them up to their enclosed chicken run/coop for her kids.

Once her kids choose the ones they want, we’ll name ours. I’m pretty sure she’s not going to pick the Buff Orpington though. ;) Not after the whole Buff the chicken fiasco last year.

These were day old chicks so we only snapped a few photos because we didn’t want to handle them too much on the first day. I’ll take some better photos next week so you can get a closer look.

Should You Wash Your Chicken Before CookingSo you know how you’re supposed to rinse your chicken and pat it dry before cooking it?  Yeah, well, at least, I THOUGHT you were supposed to, but it turns out, you’re not.  I stumbled onto an NPR article the other day that explained that the science behind rinsing chicken is faulty.  The article claimed that rinsing the chicken actually causes more harm than good, because it spreads bacteria around the kitchen because of splashing, etc. {It even provided a handy little germ-o-vision splash video to drive the point home}.

So if you’re not rinsing your bird, how do you make sure you aren’t feeding your family a not so healthy dose of Salmonella?  The article stated that cooking the bird to an internal temperature of 165 will kill far more food born pathogens than rinsing.

Here’s the thing, I HATE rinsing chicken anyway.  It’s gross.  So, this is some of the best news I’ve heard in awhile.  Still, I’m curious, will YOU still be rinsing your chicken before you cook it?  Or will  you happily stop?
