Slow Cooker Coconut & Almond Rice PuddingI’m sure I sound like a broken record every time I post a good recipe. “It’s sooo good.” “Try it now.” “It’s da bomb!”

But then, of course I’m going to go on and on about how much I love it. If I’m posting it, it’s because it was awesome. Why on earth would I post a junky, gross-tasting recipe for you guys? I wouldn’t. Although I’ve made a bunch of those gross recipes through the years, I just keep those to myself and only share the gems! So when you hear me go off about how totally awesome a recipe is, know that it’s been tested and loved by me {and/or my family}.

Kinda like this rice pudding recipe that’s awesome.

cinnamon sticksIngredients

1/2 cup basmati rice
1 can light coconut milk
1 cup milk
1/2 cup water
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup raisins
1/4 cup almonds, chopped and toasted
1/4 cup shredded coconut
1/4 cup agave nectar, divided

Directions

Add rice, coconut milk, milk, water, vanilla extract, almond extract, cinnamon, and nutmeg to the slow cooker. Cook on low for 4 hours or high for 2 hours. Mix in raisins, almonds & coconut.

Serve with a drizzle of agave nectar and a few coconut flakes on top.

Slow Cooker Pot Roast Soup Recipe

I made a pot roast for dinner a while back and shockingly there were a bunch of leftovers so I whipped up a pot roast soup in the crock pot. I mean really, we all know pot roast taste better on the second day, right? The HH had 3 bowls it was so good. :) Yep, it’s a keeper for sure.

Ingredients

1 -2 pounds left over pot roast, cooked and cubed
8 cups beef broth
1 14 oz can diced tomatoes with green chilis
1/2 cup dried pinto beans, washed
1/2 cup dried white navy beans, washed
1 carrot, chopped
1 onion, chopped
2 stalks of celery, chopped
1 teaspoon dried oregano
2 teaspoons pepper
1 tablespoon dried parsley

Directions

Toss everything in the crock pot and cook on low for 8 hours or high for 4 hours. Serve with some crust bread and you’re good to go.

Slow Cooker Macaroni and CheeseSometimes, when it’s freezing outside and I’m totally over winter, I just need some good ole comfort food to keep the Winter Blues away. And nothings screams comfort food like some hearty mac and cheese. So I made some. In my slow cooker. And it rocked my socks off.

It was melt-in-your-mouth good. And when eating it, just remember the motto I sick to: when consuming comfort food, calories don’t count. Good thing too, because I ate an embarrassing amount of this. So go put on some elastic waist pants and get to eating this already. You can thank me later.

Ingredients

8 oz cooked elbow macaroni
1 {12 oz} can evaporated milk
1 1/2 cups whole milk
1/2 stick {1/4 cup} butter, melted
1 teaspoon salt
1/4 teaspoon pepper
2 large eggs
5 cups cheddar cheese, grated
1/8 teaspoon paprika

Slow Cooker Macaroni and CheeseDirections

Coat the inside of a large slow cooker with BUTTER, lots and lots of butter. In a mixing bowl, combine all ingredients, reserving 1/2 cup of cheese. Pour into slow cooker and top with reserved cheese. Sprinkle with paprika. Cover and cook on low for 3 hours. Enjoy!

Easy Crock Pot Vegetarian Chili RecipeOne Hundred Dollars a Month reader Lisa sent me the recipe for her favorite Vegetarian Chili and I thought I would give it a try. I don’t know about you, but our family LOVES chili. Plus I would pretty much marry my crock pot if I could, because it’s practically one the greatest time savers out there.

Ingredients
2 cans kidney beans {undrained}
1 can northern white beans {undrained}
1 can black beans {undrained}
1 can corn {undrained}
1 can tomatoes {undrained}
1 diced green bell pepper {or whatever color you have on hand}
1 diced onion
1 packet of chili seasoning { I used 2 tbs. homemade taco mix}
a bit of vinegar {I used 1 teaspoon}

Directions
Toss it all in the crock pot and cook on low for 6 hours. Serve with corn bread and banjo music.

Slow Cooker Recipe Chili Verde Soup

Wow is all I have to say about this recipe. You know how I love a good crock pot meal, well I just found a new favorite. It’s simple because it’s a set it and forget it meal, but trust me when I say you won’t be forgetting it anytime soon. The HH keeps asking me when I’m going to make this again. I’m glad he liked it because I’m going to be making it a lot using the peppers I froze last summer.

Sweet Italian Marconi Golden Peppers

Ingredients

1 1/2 pounds boneless pork shoulder roast
2 tablespoon olive oil
1 {15 ounce} can cannellini beans, rinsed and drained
1 {11-ounce can}  tomatillos, rinsed, drained, and coarsely chopped
1 cup Anaheim peppers, seeded and chopped
1/2 cup chopped onion
2 {4 ounce} cans diced green chile peppers, undrained
2 cloves garlic, minced {Best garlic press on the planet}
3/4 teaspoon ground cumin
1/2 teaspoon salt
2 cups chicken broth
2 teaspoons lime juice

Directions

In a large pan over medium-high heat, heat olive oil and brown meat on all sides. Place roast in slow cooker and pile all other ingredients on top. Cook on high for 4-5 hours or low 7-8. Serve with sour cream and enjoy!
