Slow Cooker Macaroni and CheeseSometimes, when it’s freezing outside and I’m totally over winter, I just need some good ole comfort food to keep the Winter Blues away. And nothings screams comfort food like some hearty mac and cheese. So I made some. In my slow cooker. And it rocked my socks off.

It was melt-in-your-mouth good. And when eating it, just remember the motto I sick to: when consuming comfort food, calories don’t count. Good thing too, because I ate an embarrassing amount of this. So go put on some elastic waist pants and get to eating this already. You can thank me later.

Ingredients

8 oz cooked elbow macaroni
1 {12 oz} can evaporated milk
1 1/2 cups whole milk
1/2 stick {1/4 cup} butter, melted
1 teaspoon salt
1/4 teaspoon pepper
2 large eggs
5 cups cheddar cheese, grated
1/8 teaspoon paprika

Slow Cooker Macaroni and CheeseDirections

Coat the inside of a large slow cooker with BUTTER, lots and lots of butter. In a mixing bowl, combine all ingredients, reserving 1/2 cup of cheese. Pour into slow cooker and top with reserved cheese. Sprinkle with paprika. Cover and cook on low for 3 hours. Enjoy!

Easy Crock Pot Vegetarian Chili RecipeOne Hundred Dollars a Month reader Lisa sent me the recipe for her favorite Vegetarian Chili and I thought I would give it a try. I don’t know about you, but our family LOVES chili. Plus I would pretty much marry my crock pot if I could, because it’s practically one the greatest time savers out there.

Ingredients
2 cans kidney beans {undrained}
1 can northern white beans {undrained}
1 can black beans {undrained}
1 can corn {undrained}
1 can tomatoes {undrained}
1 diced green bell pepper {or whatever color you have on hand}
1 diced onion
1 packet of chili seasoning { I used 2 tbs. homemade taco mix}
a bit of vinegar {I used 1 teaspoon}

Directions
Toss it all in the crock pot and cook on low for 6 hours. Serve with corn bread and banjo music.

Slow Cooker Recipe Chili Verde Soup

Wow is all I have to say about this recipe. You know how I love a good crock pot meal, well I just found a new favorite. It’s simple because it’s a set it and forget it meal, but trust me when I say you won’t be forgetting it anytime soon. The HH keeps asking me when I’m going to make this again. I’m glad he liked it because I’m going to be making it a lot using the peppers I froze last summer.

Sweet Italian Marconi Golden Peppers

Ingredients

1 1/2 pounds boneless pork shoulder roast
2 tablespoon olive oil
1 {15 ounce} can cannellini beans, rinsed and drained
1 {11-ounce can}  tomatillos, rinsed, drained, and coarsely chopped
1 cup Anaheim peppers, seeded and chopped
1/2 cup chopped onion
2 {4 ounce} cans diced green chile peppers, undrained
2 cloves garlic, minced {Best garlic press on the planet}
3/4 teaspoon ground cumin
1/2 teaspoon salt
2 cups chicken broth
2 teaspoons lime juice

Directions

In a large pan over medium-high heat, heat olive oil and brown meat on all sides. Place roast in slow cooker and pile all other ingredients on top. Cook on high for 4-5 hours or low 7-8. Serve with sour cream and enjoy!

Crock Pot Vegetarian Lentil Stew with Sweet Potatoes

This recipe for vegetarian lentil stew with sweet potatoes was inspired by a recipe from my friend MamaJJ. Her recipe called for black beans and chicken broth. But I didn’t have that so I swapped out the black beans for lentils, chicken broth for vegetable broth and reduced the spices just a bit.

Recipes are funny that way. Sometimes you have all the ingredients, and sometimes you don’t. And that’s okay. Just make do with what you have I say. ;)

The HH, Francisco and I all loved this recipe!

Ingredients
3 cups lentils, rinsed
1 large sweet potato, peeled and chopped
1 onion, minced
2 large carrots, peeled and chopped
3 cloves garlic, minced
2 tablespoons olive oil
3 teaspoons chili powder
1 teaspoon cumin
2 quarts vegetable broth {homemade vegetable broth recipe}
½ cup chopped fresh cilantro or 2 tablespoons dried
salt and pepper to taste

Directions

Place all the ingredients in a crock pot and cook on low for 6 hours or high for 3 hours. Now seriously, how easy is that?

Put the onion, chopped carrots, sweet potato, garlic, and oil in a large soup pot. Cook over medium high head until mostly tender, 10-15 minutes, stirring occasionally. Do not brown. Add the chili powder and cumin and stir to combine.

Add the broth and beans and cook until heated through and the flavors have had time to get acquainted, about 10 minutes. Stir in the cilantro and weeds. Taste to correct seasonings and serve. Feel free to condimentize, but we did not.

Crock Pot Ground Beef w Taco Seasoning

Since I started cooking my ground beef in the Crock Pot back when I got my 40lbs of Zaycon ground beef, I just can’t stop. It makes dinner time a snap. Now I’m experimenting with different seasonings so I can freeze seasoned ground beef for even easier dinners! Here’s how I combine my DIY Taco Seasoning Mix with the Crock Pot cooking method. Easy peasy!

First, go whip yourself up a big batch of my DIY Taco Seasoning Mix & then head back here and get started:

Crock Pot Ground Beef w Taco Seasoning

Ingredients

4 pounds of ground beef {I used Zaycon ground beef of course}
8 tablespoons of DIY Taco Seasoning Mix

Directions

Place four pounds of meat in crock pot. Completely break up meat if you plan to walk away from your crock pot & leave it. The meat will cook exactly as you left it. Sprinkle seasonings on top of meat and mix in thoroughly {a lot of the seasoning cooks off, so feel free to add more than you normally would}.

Cook on low for about 5 hours or high for 2.5 hours. Once meat is completely cooked through, drain all of the fat off {You can throw frozen meat in the crock pot too, just cook for 2 hours on high and then break it up in the crock pot. Then follow the cooking instructions above}. Ignore the fact that it looks like you just cooked a bunch of brown worms, let it cool and then transfer to Ziploc bags or Gladware containers. If you’re looking to freeze 1 lb bags for taco recipes, about 2.5 cups of cooked meat is equivalent to 1 lb {give or take}.

With a massive amount of Zaycon ground beef in my kitchen, I had to have a plan. There’s only so much hamburger you can brown before you feel glued to your stove. So bring on my best friend Mr. Crock Pot. Seriously not sure how it took me this long to figure out this little time-saver trick. It’s so easy. Sure your hamburger will look a little different, so brace yourself for that. But it tastes the same and just saved me hours in the kitchen. Awesome possum.

Cooking Ground Beef in the Crock Pot

Ingredients

4 lbs hamburger {Zaycon is the best!}
Garlic salt
Pepper
Onions {you can use fresh or dried}
Any other spices/seasoning your little heart desires

Directions

Then follow the cooking instructions above}. Ignore the fact that it looks like you just cooked a bunch of brown worms, let it cool and then transfer to Ziploc bags. That’s it. So. Flippin. Easy.

Easy Crock Pot Meals Southwest Chicken Chili

Now that summer is here I can’t imagine anyone wants to be hovering over a warm stove all day making soup. So it’s time to dust off the crock pot and set it on the counter for the summer. Wait. Mine is already there. Ha!

Alright, here is my recipe for Southwest chicken chili. In a nutshell, it’s freakin’ awesome. If you have left over chicken from a bbq, this is a great way to use up the leftovers.

Ingredients

1 pound boneless chicken breast, cooked and chopped {I use Zaycon Chicken}
1/2 medium onion, chopped
1 carrot, diced
2 cups corn kernels {I used fresh}
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon thyme
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried cilantro
2 garlic cloves, minced
2 cups kindney beans {I used dried beans}
4 cups chicken broth

ear of corn

Directions

Soak the beans overnight in warm water, drain, rise and toss them back in the crock pot the next morning.

Saute the onion and carrots in olive oil and toss everything into the crock pot. Cook on low for 4 to 6 hours {or until the beans have softened} and serve warm with a yummy biscuit.

Easy Crock Pot Soups - Vegetable Soup with Beef

This morning I planned ahead and tossed a bunch of goodness into the crock pot before heading out to the garden to shovel bark. After a long day of working in the garden it’s pretty awesome to walk in to the kitchen to find a crockpot full of hot soup waiting for you.

Plain and simple, this soup rocks!

Ingredients

1 pound ground beef, buffalo or venison browned
1 onion, chopped
1 can {15 oz} black beans, drained {kidney or white beans work too}
2 large carrots, chopped
1/2 cup rice, uncooked {I used jasmine rice}
2 cans {15 oz each} stewed tomatoes
4 cups beef or vegetable stock
1 tablespoon parsley flakes
1 teaspoon salt
1/2 teaspoon red pepper flakes {optional}
1/4 teaspoon pepper
1/2 teaspoon dried basil
1 bay leaf

Directions

Toss everything in your crock pot and cook on low for 8 hours or high for 4 hours. Discard bay leaf prior to serving. Serve with a bread and butter if you have it.

Do you ever feel like you are the last person alive to find out about things? Well imagine my surprise when I was over at Girly Girl’s house yesterday and noticed she had baked potatoes cooking in her crock pot.

Mavis: Are those potatoes?

Girly Girl: Uhhh, yes.

Mavis: You can make baked potatoes in the crock pot?

Girly Girl: Are you serious?

Mavis: Oh.My.Word.

So, in case nobody ever told you {or you didn’t take a Home Economics in high school, or your mother never used a crock pot when you were a kid, here is how to make baked potatoes in a crock pot.

How to Make Baked Potatoes in a Crock Pot

  1. Turn Crock Pot on.
  2. Wrap washed potatoes in foil.
  3. Place wrapped potatoes in crock pot and place lid on top.
  4. Cook 4 hours on low for small potatoes, or 8 hours on high for giant potatoes.
  5. Gather the family around the crock pot, remove the lid, and wave your hand in the air to catch all the high fives you will receive.

Seriously, please tell me I am not the last person on earth to find out about this.
