22 Slow Cooker Recipes to Help Make Dinner Stress-Free

Slow cookers are the best thing since sliced bread. I use mine all year round, but never more than in the fall and winter months. Maybe it’s because fall sports start and dinnertime is the furthest thing from my mind. We’re crazy busy which doesn’t give me much time in the kitchen to put together a hot meal for my family.

Cue the slow cooker. You basically throw some ingredients in a big pot, flip a switch and BOOM: dinner is serves {okay it might not be quite that dramatic, but you get the gist!}.

Slow Cooker 13 Bean Soup RecipeI almost feel guilty finding a recipe on a company’s website {Bob’s Red Mill} and then telling you guys to go make the recipe using a cheaper but equally awesome alternative ingredient {Winco’s 13 bean mix, not Bob’s Red Mill}. But seriously it will save you money and taste totally awesome. So I had to share. I guess the PR peeps from Bob’s Red Mill can yell at me later. Not that they have any clue who a little ol’ blogger from Washington is, but I figure I should apologize still the same.

But seriously, the recipe needs no apologies because it’s simply awesome. It’s so flavorful and hearty. It’ll make you long for winter {okay, so it might not have powers that persuasive, but close}.

13 bean soup mix recipeIngredients

2 cups 13 bean Soup Mix from Winco {pretty much the same as Bob’s Red Mill but half the price}, soaked overnight and drained
1 ham hock
1 cup onion, chopped
1 {15 oz} can tomato sauce or 1 quart tomatoes
1 tablespoon chili powder
2 cloves garlic
1 teaspoon dried cilantro
1 teaspoon dried parsley
2 1/2 quarts vegetable or chicken stock {can use water instead}

Directions

Dump all ingredients into a slow cooker. Cook on low 6-8 hours or high 4-5. Enjoy!

Southwest Crock Pot Chicken

I was looking for a new recipe to throw in my slow cooker when I stumbled onto this recipe over at Skinny Taste. I had all the ingredients on hand, so I figured I’d try it. It looked simple {it was}, it looked delicious {it was} and it looked like something my whole family would love {they did}. I made it for dinner the other night and it was an instant hit. Seriously put this on your menu for the week!

Southwest Crock Pot Chicken

Ingredients

1 1/2- 2 lbs chicken breast
1 can {14.4 oz} diced tomatoes with mild green chilies
1 can {15 oz} can black beans
8 oz frozen corn
1/4 cup chopped fresh cilantro
2 cups chicken broth
1/4 cup chopped onion
1 tsp garlic powder
1 tsp cumin
1 tsp cayenne pepper
Salt and pepper to taste

Directions

Combine all ingredients in a slow cooker. Cook on low for 8-10 hours or high 4-6. Before serving, remove chicken, shred and place back in Crock Pot.

Serve over rice or wrap in tortillas. You can top with cheese, sour cream, fresh cilantro, salsa, green onions or anything your little heart desires. Enjoy.

Hobo Bean and Bacon Chili

My friend JJ can cook a mean, well, anything really. I’m always trying {and loving} her recipes. So when I saw this one {which she technically found in a book about Casey Jones, of all places}, and she raved all about it and about how her children were begging and harassing her to remake it daily, I knew I had to put it on my list. And those kids have some taste buds I agree with. It was awesome. Every last spoonful of it!

Hobo Bean and Bacon ChiliIngredients

6 slices bacon, cooked and chopped
1 pound of ground beef
1 large onions, diced
1 pound dried red beans, cooked
1 cup crushed pineapple
1 cup brown sugar, gently packed
1 quart of tomato sauce
1 tablespoon brown spicy mustard
1 tablespoon Worcestershire sauce
1 tablespoon of vinegar

Directions

In a large skillet, fry bacon until crispy, drain and set aside. Leaving the bacon grease in the pan, add the ground beef and onions and cook until meat is browned.

Throw all ingredients into a slow cooker. Cook on low for 4 hours. Enjoy!

I think there might be something wrong with me because I can’t stop making lentil stews. I am offically addicted. And so is the HH. It’s crazy. We have totally turned in to lentil weirdos. Pretty soon we’ll be making macrame plant holders and playing the flute.

This recipe rocks! Oh, and it’s good for you too. :)

Ingredients

1 1/2 cups pumpkin puree {How to make pumpkin puree}
1 15-ounce can chickpeas, drained
3 medium carrots, chopped
1 large onion, chopped
1 cup lentils, rinsed and drained
2 tablespoons tomato paste
1 teaspoon ground ginger {How to save on bulk spices}
1 tablespoon lime juice
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon ground turmeric
1/4 teaspoon ground black pepper
4 cups vegetable broth

how to dehydrate carrots

Directions

Place  all ingredients in a slow cooker and cook on low for 7 hours or high for 4 hours.

Easy Slow Cooker Meals - Zesty Italian Chicken

It will take you longer to get your crock pot out of the cupboard than it will for you to put this recipe together. And it’s good. Really, really good. Did I mention it’s easy? Yep, it is. All you need are a few chicken breasts, a bottle of Italian dressing and handful of Parmesan cheese and you’ve got dinner made in about 30 seconds flat.

Easy Slow Cooker Meals - Zesty Italian Chicken

Ingredients

4 chicken boneless, skinless chicken breasts cut into chunks {I use Zaycon chicken}
1 16 ounce bottle Italian Dressing
1/3 cup Parmesan Cheese, shredded

Directions

Place chicken in the bottom of your slow cooker and pour dressing over the chicken. Sprinkle Parmesan cheese on top and cook for 8 hours on low or 4 hours on high. Serve over a cooked noodles or rice {and a little extra sauce from the slow cooker}.

How easy was that? Seriously, this is good!!!

Pumpkin Pie Steel Cut Oatmeal Crock Pot

If you have an extra pumpkin {or pumpkin puree for that matter} then you’ll want to whip up a batch of this pumpkin pie steal cut oatmeal for breakfast real soon. Yep, it’s time to sleep in and let your boyfriend {Mr. Crock Pot} cook breakfast for you. Ahh fall, don’t you love it?

Ingredients

1 1/2 cups milk {I used 2% milk}
1 1/2 cups water
1 cup uncooked steel-cut oats {I love Bob’s Steel Cut Oats}
1/4 cup maple syrup
3/4 cup unsweetened pumpkin puree {how to make pumpkin puree}
1/2 cup applesauce
1 teaspoon vanilla
1 tablespoons pumpkin pie spice {pumpkin pie spice recipe}
1/4 teaspoon salt

bob's red mill steel cut oats

Directions

Coat the inside of your slow cooker with butter {or cooking spray}.

Place  all ingredients in a slow cooker and cook on low for 7 hours or high for 4 hours.

If you want to make steel cut oats but don’t have a slow cooker, simply place all your ingredients in a large sauce pan and simmer for about 45 minutes, stirring occasionally to make sure it doesn’t stick to the bottom of the pan. Serve with extra milk if desired.

Easy Crock Pot Recipes Mushroom Chicken

Awhile back I bartered with my neighbor Francisco and one of the items we traded was a can of cream of mushroom soup. In all my life I think I have purchased maybe 2 cans of cream of mushroom soup, so I wasn’t exactly sure what to do with it.

Then I looked in one of my favorite cookbooks Fix-It And Forget and found a recipe for mushroom chicken. Everyone loved it. Even me, and I don’t really care for mushrooms. I don’t know about you, but I LOVE my crock pot.

Here is the recipe:

Easy Crock Pot Recipes - Mushroom Chicken

Ingredients

4 boneless, skinless chicken breasts
1 {10 1/2 oz} can Cream of Mushroom Soup
1 {7 oz} can sliced mushrooms, drained
1/4 cup chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper

Directions

Place chicken in the bottom of a crock pot, and add salt and pepper. Pour chicken broth, cream of mushroom soup over the chicken and then pour the mushrooms over the top. Cook on low for 6 hours or high for 3-4 hours.

Serve with rice or your favorite vegetables.

Vegetarian Indian-Spiced Lentils with Spinach and Rhubarb recipe

As soon as I spotted this recipe for Indian-Spiced Lentils with Spinach and Rhubarb in Vegetarian Times magazine, I knew I had to make it. Well last night I gathered up some rhubarb and spinach and let me tell you Bob, this stuff was freakin’ delicious.

It was so good I felt like I was sitting in one of those trendy restaurants that only total hipsters go to. Seriously, freakin’ delicious doesn’t even begin to describe it. Hearty? Earthy? I should be wearing corduroys? Hmm. I can’t quite put my finger on it but it was gooooooood!

Ingredients

2 tablespoons yellow mustard seeds
2 ½ tsp. dried cumin
3 tablespoon dried ginger
3 cloves garlic, minced
1 medium onion, chopped
½ cup raisins
1 cup lentils, rinsed and drained
5 cups vegetable broth
2 cups rhubarb
6 cups spinach leaves, chopped
½ cup cilantro, chopped

Easy Crock Pot Meals Southwest Chicken Chili

Now that summer is here I can’t imagine anyone wants to be hovering over a warm stove all day making soup. So it’s time to dust off the crock pot and set it on the counter for the summer. Wait. Mine is already there. Ha!

Alright, here is my recipe for Southwest chicken chili. In a nutshell, it’s freakin’ awesome. If you have left over chicken from a bbq, this is a great way to use up the leftovers.

Ingredients

1 pound boneless chicken breast, cooked and chopped {I use Zaycon Chicken}
1/2 medium onion, chopped
1 carrot, diced
2 cups corn kernels {I used fresh}
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon thyme
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried cilantro
2 garlic cloves, minced
2 cups kindney beans {I used dried beans}
4 cups chicken broth

ear of corn

Directions

Soak the beans overnight in warm water, drain, rise and toss them back in the crock pot the next morning.

Saute the onion and carrots in olive oil and toss everything into the crock pot. Cook on low for 4 to 6 hours {or until the beans have softened} and serve warm with a yummy biscuit.
