Easy Appetizer Ideas – Homemade Chex Party Mix

I thought I would go ahead and post our favorite Chex Mix recipe again. We will be enjoying this yummy Chex party mix {by the handful} over the next few days. I hope you like it as much as we do. It just wouldn’t be Christmas without it.

Ingredients

3 cups Corn Chex cereal
3 cups Rice Chex cereal
3 cups Wheat Chex cereal
1 cup mixed nuts {I used cashews and almonds}
1 cup pretzel pieces
6 tablespoons butter
2 tablespoons Worcestershire sauce
1 1/2 teaspoons seasoned salt
3/4 teaspoon garlic powder
1/2 teaspoon onion powder

Directions

Preheat oven to 250 degrees

In large bowl, mix together the cereal, nuts, pretzels and set aside.

Place  6 tablespoons in a large roasting pan and melt butter in the oven. Stir in seasonings, then gradually stir in cereal mixture until evenly coated.

Bake for 1 hour, stirring about every 15 minutes. Spread on Chex Mix on paper towels to cool, then store in airtight container.

Ever since The Girl Who Thinks She’s a Bird and Monkey Boy were small, we have always made a tube of Pillsbury Cinnamon Rolls for Christmas breakfast. It’s not exactly idyllic, or something you would see in a Norman Rockwell painting, but I’m pretty sure we are stuck with it forever because The Girl won’t let us do anything different.

Which is probably a good thing, because if it was up to Monkey Boy, we’d be eating Doritos every year on Christmas morning.

Mrs. Hillbilly’s Amaretto Cheesecake Recipe

If you have ever wondered why elastic was invented, it was so people could wear stretchy pants during the holidays and not feel bad about eating cookies, pies and cheesecakes. Seriously, it’s true. Go look it up.

Mrs. Hillbilly’s amaretto cheesecake is the freakin’ bomb, and if you are a big fan of cheesecake and have access to a liquor cabinet, drop everything and go make this right now.

You can thank me {and Mrs. HB} later.

So without further ado, here it is folks, the best cheesecake on the planet.

Crust

6 oz melted butter
2 cups grahm crackers finely ground
1/2 cup slivered almonds, toasted
1/4 cup amaretto

Cheesecake

2 pounds cream cheese, softened
1 1/4 cup sugar
4 large eggs
3/4 cup amaretto
pinch of salt

Topping

2 cups sour cream
1/4 cup sugar
1/4 cup amaretto

Amaretto Sauce

2 cups Powdered Sugar
1 cup Amaretto
1 ounce {1/4 stick} butter

Directions

Preheat oven to 350

Spray a 12″ spring form pan and set aside.

Toss all the crust ingredients in a food processor and pulse until mixture is well combined. Press graham cracker mixture up the sides and bottom of the spring form pan. Bake crust for 10 minutes and let cool.

In a mixing bowl combine the cream cheese and sugar together until nice and smooth, make sure to stop the mixer every once in a while to scrape the sides and bottom of the bowl down {about 3-4 minutes}. Add salt. Add eggs one at a time keeping the mixer on it’s lowest setting until all the eggs have been incorporated into the batter.

Pour cheesecake mixture into the graham cracker crust and bake for 40 minutes or until the center has set.

Remove cake from the oven and let it cool for 10 minutes.

To prepare the cheesecake topping combine the sour cream, amaretto,  sour cream and sugar together until smooth. Pour over cheesecake, and return the cake to the oven to cook for another 10 minutes.

Remove from the oven, cool for 30 minutes and refrigerate in the spring form pan overnight. The next morning carefully remove the pan and place on a serving platter.

Mrs. Hillbilly also likes to include a jar of sauce with her amaretto cheesecake but it is totally optional {but super yummy}.

To make the sauce simply heat the butter, amaretto and powdered sugar in a small saucepan and wish until smooth.  Pour into 8 ounce canning jars and chill.

Christmas Side Dish Recipe – Baked Pineapple

If you are planning on serving ham this Christmas and have never tried baked pineapple before, you need to try this recipe.  My neighbor Girly Girl gave it to me some time ago {Chino the Handyman grew up with this} and I now serve baked pineapple every time we cook a ham.  To not serve this dish with a ham dinner would be like not serving mashed potatoes with turkey. Quite simply, they belong together.

Consider yourself warned… You will totally become a side dish super star if you bring this to someones house for Christmas dinner {or serve it at your own house}. Not only is baked pineapple divine, it is ridiculously easy to make, and everyone will want the recipe.

{1} 20 oz Can of Crushed Pineapple
2 Tbsp. Cornstarch
2 Eggs Beaten
1 Cup of Sugar
1/2 Cup of Milk
1 Tsp. of Vanilla Extract

Directions

Mix together and pour into a greased baking dish {I used {2} 4″ ramekins}*  sprinkle with cinnamon and cut a few small pieces of butter and place on top. Bake @ 350 for 1 hour.

How To Make An Edible Arrangement

I made this edible arrangement 2 years ago and brought it to my parents home for Christmas.  I decided to re-post it today because edible arrangements are simple to make and are so much nicer than flowers in my opinion.

Plus, you’ll look like a freakin’ rockstar when you walk in to your parents house with an handmade edible arrangement and your brother shows up empty handed. Ya, I may be an adult, but sibling rivalry, is forever baby!  FOREVER.

Okay, to get started you are going to need a cool container.  I swiped this puppy from my parents house years ago, and figured Christmas would be a great time to return it.

I found a block of floral foam from the dollar store and simply dropped it in the container and secured it in place using clean, decorative rocks. I got those from my mothers house as well. Ha!

Next, gently moisten the floral foam and add a few kale leaves around the inside of the container so they hang over the sides a bit.

For this edible arrangement I used the flowing items-

  • 1 Cantaloupe
  • 1 Honey Dew Melon
  • 2 Apples
  • 1 Bag of Marshmallows
  • 2 Containers Dipping Chocolate {found in the baking aisle}
  • 2 Bananas
  • 2lbs. Seedless Grapes
  • 2lbs. Strawberries
  • Green Sprinkles
  • Bamboo Skewers
  • 2 pieces of Green Floral Foam

To make melon spears simply slice the melon in half, then into 8 – 10 sections. Cut off the rind.

Edible Arrangement

Insert bamboo skewers through melon and set aside.

Next remove the top, bottom and sides of the pineapple then slice the pineapple into 3/4″ slices.  Use a flower cookie cutter* to cut out the shapes.

Add grapes to bamboo skewers.

Core apples, and cut into 12 slices. Dip in white chocolate and set aside on waxed paper until the chocolate has set.

Skewer strawberries, then dip clean strawberries into melted chocolate and place in a block of moistened foam {see below} until the chocolate has set.

To do this I simply added a piece of floral foam to a wide bowl, moistened it, and taped off little sections then placed the berries evenly in the foam filled bowl to dry.

Dip the tops of marshmallows in white dipping chocolate and dip in sprinkles.

One all your fruit has been cut, dipped and dried, begin placing the skewers of fruit in the foam filled container at varying heights.  Stuff edges with kale and you are good to go!

Christmas Side Dish Recipes – HomeStyle Scalloped Potatoes

I originally posted this recipe a few months ago but wanted to share it with you again today in case you are serving a ham or roast for Christmas dinner this year.  These are seriously the best potatoes we have ever had and would be the PERFECT side dish to include with your dinner meal this year.

The Girl Who Thinks She’s a Bird and some of her friends took a cooking class a while back, and scalloped potatoes were one of the dishes they learned to make from scratch.  After having to listen to The Girl rave about the side dish, we decided to try and make it at home from {her} memory.

We hit a home run.

Not only was this recipe for scalloped potatoes super delicious, but everyone in our house wanted seconds.

This recipe is a keeper, that’s for sure.

Ingredients

2 lbs russet potatoes, peeled and sliced 1/8-inch thick
1 onion, minced
1 cup low sodium chicken broth
1 cup heavy cream
2 bay leaves
4 ounces Parmesan cheese, grated
2 garlic cloves, minced
2 tablespoons butter
1 teaspoon dried thyme
1 teaspoons salt
1/2 teaspoon ground black pepper

Directions

Preheat oven to 425 degrees

In a large pot over medium heat, saute butter and onions until caramelized.

Add garlic and saute for a few seconds then add chicken broth, cream, sliced potatoes, bay leaves, thyme, and salt and pepper.

Reduce heat, cover, and simmer on low until the potatoes are tender. Discard the bay leaves, and pour potato mixture into a buttered 8″ or 9″ casserole dish.  Top with Parmesan cheese and bake in the oven for 15 – 20 minutes or until the cheese in all bubbly and lightly browned.

Cool slightly and serve warm.

Sunday Brunch Recipe – Broccoli, Bacon and Cheddar Quiche

This recipe for Broccoli, Bacon and Cheddar Quiche is my favorite kind of breakfast to make when broccoli is in season or on sale. Not only are quiches perfect for Sunday brunch, but you can make them ahead of time and they are hearty enough to pack in your hubby’s lunch the next day.  Well, that is if there is anything left over.

This is one of our favorites, I hope you like it.

Ingredients

6 slices bacon, cooked and chopped
1 cup broccoli, chopped
1 small red onion, sliced thin
1 pie crust
5 eggs
1 cup milk {I used 2%}
1 cup cheddar cheese
salt and pepper, to taste

Directions

Preheat oven to 375ºF.
Place bacon, scallions and broccoli in the bottom of the pie crust.
In a large bowl, mix together the eggs, milk, cheese, salt and pepper.
Pour egg mixture over bacon, broccoli and onions
Bake for 40-50 minutes until a knife inserted near the center comes out clean. Cool slightly, and serve.
