Last week got off to a bit of a rocky start for us food wise. We were so busy working on secret project #2 that we mostly ate random freezer meals and canned goods from the pantry until we could make it to Costco to load up on salad things.
Every single time I eat Trader Joe’s fiery chicken vindaloo I am reminded that it’s TOO SPICY!! Why can’t I ever remember that while I’m tossing it in my cart?
By the way, has anyone been to TJ’s lately? is there anything new I need to pick up the next time I go?
If anyone asks what I want for Christmas I’m going to tell them a case of Heinz beans. I could seriously eat a can of Heinz beans every single day. 🙂
Leftover Costco frozen meatballs from the holidays? I’m not sure, but they were still good. Actually, pretty much anything is good if you throw a little Rao’s sauce on it.
Do 4 plums cut up to fill a cereal bowl count as breakfast? Yes, yes they do! The $4.99 we spent on the sack of plums from Costco was the best money I spent last week.

Baked potatoes with butter, sour cream and bacon are good, anytime of year.
I’m finding with all the extra walking and biking I’m doing to prepare for my big hiking trip that I am SUPER hungry lately. And I think I’m doing pretty good at not filling up on sweets either.
Although I have been trying to figure out if there was possibly some way to safely get a slice or two of pie in my backpack without destroying it. 😉

I have no idea why we bought baby tomatoes. We are still getting plenty of salad tomatoes from the garden daily. The Panera mac and cheese was a bad idea {too goopy}. The HH seems to like the clam chowder though.
I picked up the fruit bars for a trail snack.

Sometimes, you’ve just got to give in to a craving. 🙂
It may not look like it, but it was a pretty good week. The salads and plums were my favorite. One of these days I’ll get back to cooking again. I’m just not sure when.

If you drive to Capitol Reef National Park they sell pies made with fruit from inside the park! It is 2.5 hours away from Zion but the drive is beautiful and there are some great hikes there as well.
We didn’t buy a pie but we did pick up some jam. Cant remember now what flavor but I do remember it being delicious.
