Rotel Spanish rice. Basically it’s two cups* of rice, one can of Rotel and a little water. Toss it all into the rice cooker, hit the button and viola!
Spanish rice that you didn’t have to stand over a stovetop to make. Did I mention it freezes well too?
Yes, yes it does!

Rotel Spanish Rice Recipe
That’s it!

Have you ever made Spanish rice this way? Do you have something special you like to cook in your rice cooker? I’m always looking for ways to save time in the kitchen.

* Use the cup that came with your rice cooker {rice cup} to measure out 2 cups of rice. A “rice cup” is equivalent to 180 grams or about a ¾ cup standard measuring cup.
