Have you ever made Spanish rice this way? Do you have something special you like to cook in your rice cooker? I’m always looking for ways to save time in the kitchen.

* Use the cup that came with your rice cooker {rice cup} to measure out 2 cups of rice. A “rice cup” is equivalent to 180 grams or about a ¾ cup standard measuring cup.

Got rid of my rice cooker, but going to use this recipe on the stovetop. Attempted to make Spanish rice last week. Didn’t pass muster, it really lacked flavor. This looks good, and so easy!

I like to add a handful of peas or diced mushrooms and cumin/paprika to mine along with the rotel. Not technically Spanish but very tasty.

Our $20 rice cooker does not have as many markings, so I checked what yours costs right now, and: whew. $180 vs. $20 is quite a difference!
But, probably like hair dryers, if a cheap one does what you need, then no need to upgrade; and if it doesn’t do what you need, then upgrades are available…

That looks delicious. I have a confession to make though…I’ve never made real rice. I didn’t grown up in a real rice household so I never got into the habit of making it a part of my food choices. My mother only made instant rice or boil in bag types.

You would love a basic rice cooker then….you just measure out the rice and water per the machine directions, close the lid, and turn it on. Voila, rice in no time. 🙂

Can you use just plain can of diced tomatoes if you don’t like chiles? Would it need further seasoning?

I occasionally make the rice with a packet of onion soup mix in there, super yum. Sometimes I’ll mix in curry powder instead. I also cook quinoa in it, whatever the package says, I think it’s 1.5 cups water per cup of quinoa. I cook tons of stuff home made from scratch but the one thing I never ever have done right is rice on the stove. Looooove my rice cooker!

Thank you for the link for your rice cooker model. I ordered it yesterday in hopes that the steel cut oat option will help me want to eat oatmeal. Husband has microwave regular oatmeal daily but I just don’t like that kind much. Looking forward to making the Rotel rice recipe, too.

I use my instant pot to cook my brown jasmine rice from Trader Joe’s, and it comes out oerdect every time. If I didn’t use my instant pot so much, I would definitely invest in a rice cooker. I love spanish rice and will definitely try your recipe!
