Strawberry and Nutella Crepes with Bananas

Ingredients

  • 1 cup flour
  • 2 teaspoons sugar
  • 1/4 teaspoon salt
  • 3 eggs
  • 2 cups milk {I used 2%}
  • 2 tablespoons butter , melted
  • 3 cups fresh strawberries , sliced
  • 3 bananas , sliced
  • Nutella
  • Powdered sugar

Instructions

  1. In a mixing bowl, combine flour, sugar and salt, and set aside. In a separate bowl, beat eggs and milk together with an electric mixer or whisk rapidly. Stir in flour mixture and beat until smooth. Add in melted butter and stir until combined.
  2. Grease a skillet or griddle {I used coconut oil} and heat over medium-high. Scoop batter onto hot griddle, using approximately 2-3 tablespoons for each crepe {I like to use a 3 tablespoon cookie scoop}. Spread batter as thinly as possible with a spatula. Cook until golden brown on both sides.
  3. While still warm, spread a layer of Nutella onto a crepe. Top with sliced strawberries and bananas and sprinkle with powdered sugar. Serve warm for any meal {or even for dessert!}.
