Easy Quinoa Recipes – Chicken Quinoa Taco Salad

If you like taco salads, and taco seasoning in general, I think you are really going to like this super easy chicken, quinoa, taco salad recipe. I made it for lunch today and if I play my cards right and hide it in the crisper drawer, it should last me about 2 -3 days.

Yes.  I am totally addicted to quinoa crack.

2 cups quinoa
3 1/2 cups water
1 15 oz can corn kernels
1 15 oz can S&W mild jalapeno black beans with lime juice
1 packet of taco seasoning {I used Mc Cormick}
1 red onion, chopped
1/4 cup cilantro, chopped
3 tablespoons olive oil
2 tablespoons lime juice
salt and pepper to taste
2 grilled chicken breasts, sliced {I seasoned mine with Lawery’s Santa Fe marinade}

Place the quinoa, water and contents of the taco seasoning packet in a rice cooker and cook as you would regular rice.  When the quinoa is finished cooking, place it in a large bowl and add the beans, corn, onions, and cilantro, toss and set aside.

In a small bowl blend the lime juice, olive oil and salt and pepper together.  Pour the mixture over the quinoa salad and mix well. Place sliced chicken over the top and serve.

    This looks so yummy! I made quinoa for the first time tonight. I cooked it in some chicken broth and put it in chili. It almost didn’t make it into the chili because my 3 year old and I were digging into it and she loved it. But of course I’m going to have to convince the guy that it’s delicious. 😉

    my husband calls quinoa “birdseed” but he likes it :) Your recipe sounds great – will have to try it….I just cook mine with chicken broth and cut up a bunch of veggies to put in it.

    I will have to try this. So far the couple of times I have made quinoa, it has not gone over well. No one has liked it. I need to try something new to use up the big Costco bag I bought. I do think I will try the rice cooker this time, I had not thought of using that before.

    Any idea the servings this makes? I’m going to make this tomorrow for my toddler group snack (for the room full of foodies and their kids) and I need to calculate out the nutrition information for my diabetes.

    The first time I used Quinoa was to make a Gluten Free Chocolate Quinoa Cake…Best cake ever!!!
    Thanks for another great recipe.
