I’m sure you know by know I am totally in love with my crock pot. I would totally marry it if I could and if I was ever stranded on an island that had electricity {ha!} I would total bring it along.

This recipe is will take you a whopping 3 minutes to toss together and let me tell you Bob, it was super tasty too!

Ingredients

4 boneless, skinless chicken breasts {I used frozen}
2 tablespoons butte, melted
1/4 cup honey
2 teaspoons curry powder
1/2 teaspoon kosher salt
1/4 teaspoon pepper

Directions

There are really 2 different ways to make this recipe.

If you plan on using frozen chicken breasts, simply turn the crock pot on low, and place frozen chicken in the bottom of the crock pot.  Melt the butter and all the remaining ingredients together and pour the sauce over the chicken, put the lid on, and cook for 8 hours {this is what I typically do}.

If you plan on using thawed chicken breasts, turn your crock pot on low, and place the chicken in the bottom of the crock pot,  melt the butter and add all the remaining ingredients together and pour the sauce over the chicken. Put the lid on, and cook for 3 -4 hours.

Serve over a bed of your favorite rice.

Yesterday I made another super delicious crock pot meal for dinner. The weather was really nice and I didn’t want to miss my chance to get some garden chores done with the sun shinning. Not only was this crock pot chicken dinner super easy to make, it was delicious too!

Here is the easy peasy recipe:

Ingredients

chicken breasts
2 large carrots, chopped
1/2 cup low sodium soy sauce
1/4 cup rice vingar
1/4 cup sesame seeds
2 tablespoons, candied ginger {or 1 tablespoon ground ginger}
1/2 teaspoon kosher salt
1 tablespoon sesame oil
2 teaspoons dried parsley

Directions

Add all ingredients in to the crock pot, and cook on low for 5 hours or high for 3 hours. Serve over a bed of rice. Sweet diggety, I love it when I only have to spend 5 minutes making dinner!

Easy Crock Pot Meals - White Bean Chicken Chili Recipe

It’s days like today that I am so glad I own a crock pot. This afternoon when I walked in from playing in the dirt all morning, a batch of homemade white bean chicken chili was waiting for me. And all I had to do was find a bowl.

I’m sure you can tell by now I like simple foods. And let me tell you Bob, if you’ve got 5 minutes, you’ll want to make this.

Ingredients

1 pound boneless chicken breast, cooked and shredded
1 medium onion, chopped
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried cilantro
4 garlic cloves, minced
2 cans {15 ounces each} white kidney beans, rinsed and drained
4 cups chicken broth

Toppings {optional}

cheddar cheese
sour cream
green onions

Directions

Saute the chopped onion in olive oil and toss everything into the crock pot. Cook on low for 4 to 6 hours and serve warm with a nice hunk of bread and butter.

Creamy Chicken Noodle Soup

I used a can of cream of chicken soup today for the first time in my life. How weird is that? Had it not been for my recent bartering session with Francisco, I probably would have gone my entire life with using it.

I made a batch of creamy chicken noodle soup for dinner tonight in the crock pot and THIS SOUP ROCKS! Here is the recipe:

Ingredients

3 cups cooked, shredded chicken {about 2 chicken breasts}
8 oz Egg Noodles {I used No Yolks brand}
3 large carrots, chopped
4 cups chicken broth
1 can Cream of Chicken Soup {Thanks Francisco}
1 1/2 cups of water
2 cloves garlic, minced
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon red pepper flakes {totally optional}
1/2 teaspoon salt
1/2 teaspoon pepper

Toss all the ingredients in the crock pot except the egg noodles and cook on low for 6 hours or high for 4 hours.

When the soup has finished cooking, add the noodles, and cook soup {with noodles} for an additional 20 minutes.

Serve with a crusty chunk of bread.

I made a batch of taco soup this morning for dinner tonight and it turned out awesome! I had a big bowl of of the stuff for lunch, and it was mighty tasty if I do say so myself.

You probably already know by now how much I love my crock pot. Yep, I pretty much want to marry it because it makes dinner time so easy. If you don’t own a crock pot, you need one. Seriously. Everyone should own one. Well, unless of course you live in a yurt in Mongolia and don’t have electricity.

Here is my recipe:

Ingredients

1 pound ground beef, buffalo, venison, chicken, possum {whatever you make tacos with}
1 onion, chopped
2 cups pinto beans soaked overnight, or 2 {15 oz} cans drained and rinsed pinto or black beans
2 cups corn kernels
1 cup pasta sauce
2 cups water
2 {14.5 ounce} cans peeled and diced tomatoes
2 tablespoons DIY Taco Seasoning or 1 {1.25 ounce} package taco seasoning mix

Directions

Cook the ground meat over medium heat until cook thoroughly and browned. Stir in tacon seasoning and let rest for a few minutes. Add all the ingredients to the crock pot, cover, and cook on low for 8 hours or high for 4 hours.

Serve warm with tortilla .

Easy Crock Pot Recipes - Fully Loaded Baked Potato Soup

Last week Robin from SoCal mentioned she served loaded baked potato soup for dinner. I couldn’t stop thinking about it. After 3 attempts  I finally came up with a recipe I not only LOVE, but my family loves too.

This recipe for loaded baked potato soup is perfect for a busy weeknight or any weekend you plan on tooling around in the garden all day, and don’t want to cook when you finally come inside. The best part {in my opinion} are the toppings. Load your soup up anyway you like it and dig in!

Ingredients

3 pounds baking potatoes, peeled, cut in 1/2 -inch cubes
1 quart chicken broth
4 garlic cloves, minced
1/4 cup butter
2 1/2 teaspoons salt
1 teaspoon pepper
1 cup milk {I used 1%}
3 tablespoons chopped fresh chives {topping}
1 /4 cup sour cream {topping}
8 slices bacon, cooked & crumbled {topping}
1/4 cup cheddar cheese {topping}

Loaded Baked Potato Soup

Directions

Combine the potatoes, chicken broth, garlic, butter, salt and pepper and cover and cook on low for 8 hours or high for 4 hours until the potatoes are nice and tender.

Once the potatoes have softened, gently mash them {do not puree, as you still want the potatoes to be a wee bit chunky} and stir in 1 cup of milk.

Ladle soup into bowls and top with sour cream, bacon, chives and cheese.

Yummalicious!

Easy Crock Pot Recipes 13 Bean Vegetarian Soup

For the last two nights we’ve been feasting on a giant pot of 13 bean vegetarian soup. This soup is super hearty and perfect for these chilly winter nights we’ve been having. The recipe is simple. Just rinse the beans, place all the ingredients in the crock pot, and turn it on. It doesn’t get any easier than that folks.

Ingredients

29 ounce bag Bob’s Red Mill 13 Bean Soup Mix
1 large onion, chopped
3 celery ribs, chopped
3 garlic cloves, minced
2 cups frozen corn
8 cups vegetable broth
2 {14 1/2 ounce} cans diced tomatoes
1 tablespoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes

Directions

Rinse beans in warm water and add to your crock pot. Add all other ingredients, stir, and cook on low for 8 hours or high for 4 hours. Serve warm with a crusty hunk of bread.

Store leftovers in the refrigerator for up to 3 days or freeze soup for later use.

Yesterday I made a batch of homemade chicken noodle soup in the crock pot. Sure I had to beg some carrots and 2 stalks of celery off of Girly Girl to make it, but man was it good.

I used to think Crock Pot meals were for busy days when there was no time to cook. But apparently not. Rolling out of bed at noon to toss a few ingredients in your crock pot then heading back to bed is totally acceptable.

And tasty too.

I present… Chicken Noodle Soup. Enjoy!

Ingredients

8 cups chicken broth
3 chicken breasts {I used boneless, skinless, frozen ones}
2 cups carrots, chopped
1 cup celery, chopped
1 medium onion, chopped
3 garlic cloves, minced
1 bay leaf
1 teaspoon dried thyme
1 teaspoon Tapatio hot sauce {the HH loves this stuff!}
2-3 teaspoons salt
1 teaspoon fresh ground pepper
1/2 teaspoon chili powder
8 oz egg noodles, uncooked {I used No Yolks brand}

Directions
Toss all ingredients EXCEPT the egg noodles in a 6 quart crock pot, stir, and cook on low for 8 hours or high for 4 hours.

When the soup has finished cooking, remove the bay leaf and discard. Shred the chicken meat with a fork in the crock pot, add noodles, and cook soup {with noodles} for an additional 20 minutes.

Serve with a crusty chunk of bread.

I originally shared this recipe with you over a month ago, and the response on it was great. I wanted to re-post it again in case anyone missed it the first time around.

So if you wake up exhausted tomorrow morning from passing out Halloween candy all night, whip up this easy peasy recipe for chicken tortilla soup in the crock pot and let it simmer on low until dinner time.  Trust me, this recipe rocks!

Ingredients {slightly adapted from Spark Recipes}
1 pound frozen chicken {you’ll shred it in the crock pot just before serving}
1 {15 ounce} can diced tomatoes {I used Italian style}
1 {10 ounce} can enchilada sauce {I used mild}
1 large onion, chopped
2 cloves garlic, minced
32 oz chicken broth {thanks Vitacost}
1 teaspoon cumin
1 teaspoon fresh freshly ground salt
1/4 teaspoon freshly ground black pepper
2 cups frozen corn {canned would be fine}
1 can S&W black beans with jalapenos {rinsed}

Directions

Place all of the ingredients in a large crock pot, stir, cover, and cook on the low setting for 8 hours or on the high setting for 4 hours. Once the chicken tortilla soup has finished cooking, using two forks, shred the chicken in the crock pot. Stir, and ladle in to bowls. Serve with crushed tortilla chips, sour cream or fresh guacamole.

Easy Crock Pot Recipes – Stuffed Bell Peppers

Last night we had a simple dinner of beans, rice, chicken and shredded lettuce.  It was kind of like a taco, but without the tortilla {I forgot to thaw them in time}.  As I was staring at the leftovers in the refrigerator this morning trying to figure out what to make for dinner tonight, suddenly an idea came to me.  I would use the leftovers {plus some green peppers} to whip up some stuffed bell peppers in the crock pot.

Genius! I bet you didn’t know you could cook stuffed bell peppers in the crock pot did you?

Well you can.  Here is the recipe.

Ingredients

4 large bell peppers
2 cups cooked rice
1 cup leftover shredded chicken or taco meat {I used chicken}
1 cup corn kernels {I used frozen}
1 {15 oz} can S&W jalapeno flavored black beans, drained
3/4 cup salsa {Here is my homemade salsa recipe}
3/4 shredded cheese {cheddar is preferred, but I used mozzarella}
1/4 cup shredded cheese to sprinkle over the top of the peppers towards the end
1/2 cup water


Directions

Chop off the top of the bell pepper and remove the seeds and membranes.

In a large bowl, combined the chicken, rice, corn black beans, salsa and 3/4 cup of cheese and mix well, and stuff the bell peppers with the rice mixture.

Carefully place the bell peppers in a crock pot {you want them to fit nice and tight into the crock pot} if you have a large crock pot like I do than simply pack the peppers as close as you can and prop them up with a custard dish or two so they do not fall over.

Place 1/2 water into the bottom of the crock pot, put on the lid and cook for 4 hours on low.

Just prior to serving sprinkle 1/4 of cheese over the tops of the peppers, put the lid back on for an additional 5 -7 minutes so the cheese has time to melt.

Serve warm.
