Oh man. One of the things I’m going to miss about my old garden are my boatload carrot harvests. I used to sit back and wonder how I’d use up all those carrots, and then I’d remember so many of my favorite recipes include them as an ingredient. My favorite type to grow was the Carrot Carnival Blend from Botanical Interests. But really, any variety of carrot will do in these 10 awesome recipes:
Chunky Vegetable Soup w/ Beef: This is a set it and forget it Slow Cooker meal that is just the ticket for those chilly fall nights. Plus, it includes tons of big fat carrot chunks. It’s awesome. {Pin it for later}
Carrot Cake Jam: This jam is so freakin awesome. I know carrot jam seems weird, but trust me on this one. You’ll be slathering it on everything! {Pin it for later}
Brown Sugar Glazed Carrots: One of my very favorite recipes to make with Easter dinner. Or any dinner really. The carrots always turn out so tender and they practically melt in your mouth. {Pin it for later}
Heirloom Carrot Cake Pancakes: Slap some butter on these when they are warm and top them with some maple syrup and they just might change your life! {Pin it for Later}
And lastly, here is a little bonus for you:
