Seriously, how can it be September 1st already? Where did the summer go?
On one hand it feels like summer just got started. But then when I open the door in the morning and I feel those cooler temperatures, I’m like BRING IT ON. I am so ready for fall.
Do you know what I mean? Do you feel that way too?

We went to Costco. I loaded up on salad supplies.
I’m still not tired of the Mediterranean Crunch Salad mix from Costco yet. 🙂 I think we’ve been pretty much eating it 4 times a week for the past 10 {?} months and I’m not sick of it yet.
A little lettuce, broccoli curls, carrots, apples, bacon, peppers, cucumbers, tomatoes, bacon… What more do you need?
Apparently the HH needed Trader Joe’s teriyaki chicken. 🙂 Seriously, for $5.99, it can’t be beat.
Market Basket $24.98
After enjoying that beautiful prosciutto and burrata salad from Harrods, I decided to pop into Market Basket yesterday and get all the ingredients {except the gold leaf, I think we can do without that}.
I bought some pesto from Costco a while back and stuck it in the freezer, so once it thaws out I plan and try to make the salad this week. I’ll let you know how it turns out.
I think first though we need to make one last trip to the local ice cream stand before it closes for the season.
I think we’ve been 5 times this summer and so far cherry amaretto has been my favorite flavor.

Not sure if you have an Aldi close to you but they have little jars of pesto for sale and it is so darn good. We even use it on sandwiches. We keep 2 or 3 jars in the cupboard all the time. One of these days we will get around to using it on pasta like you are suppose to.

Totally agree about their pesto. I prefer the red sun dried tomato one… I try and have 8-10 jars in stock as it is hard to find in out cape May county store!

For the first time since our son was born, I managed to get some freezer cooking done. It’s nowhere near the level I used to do, but it’s enough to make life significantly easier for a couple months.
Our son just turned 3, and I’ve been teaching him how to follow visual recipes, so he also cooked dinner one night this week (he can fully assemble homemade pizza when given the prepped ingredients, and then I just pop it in the oven). I might have him do lasagna next.

Mavis every time I buy Mediteranean Crunch salad I think of you! I currently have 2 pots of Rancho Gordo beans simmering- Royal Corona and Good Mother Stallard beans. I’m using half of the Good Mother Stallard beans for a recipe using pancetta and fresh sage. The Royal Corona will be used for a white bean and kale panzanella. I have a huge backlog of Rancho Gordo beans so I’m cooking lots of beans these days.

My saying is, “It’s never to cold to eat ice cream!” The ice cream stands will be closing up here soon in Vermont so that’s when I have to start buying it in the store. Ice cream it’s not just for summertime!
