Blackberry Recipes | Blackberry Apple Cake

Ingredients

Granulated sugar, for pan
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, melted, plus more for pan, plus 2 tablespoons for topping
3/4 cup plus 2 tablespoons packed light-brown sugar
1/2 cup milk {I used 2%}
2 large eggs
4 tart apples, peeled, cored, and cut into 1/4 inch slices
1 cup blackberries {I used fresh}
1/4 teaspoon ground cinnamon


Instructions

  1. Preheat oven to 375 degrees.
  2. Butter a 9-inch springform pan, and dust with granulated sugar.
  3. Combined the flour, baking powder, and set aside. In another mixing bowl stir together the melted butter, 3/4 cup brown sugar, milk, and eggs. Stir into flour mixture and mix until smooth.
  4. Spread batter the evenly into prepared pan and arrange apple slices over batter.  Place blackberries over the apples. Combine the remaining 2 tablespoons of brown sugar, cinnamon, and 2 tablespoons of butter in a glass bowl and microwave for 15 seconds.  Stir and pour over cake batter, berries and apples.
  5. Bake 40 -50 minutes or until the center is set and the top is golden brown.
  6. Cool. Eat.  Smile.
