Candied Cashews

Ingredients

2 cups whole cashews
1 large egg white
1 tsp water
⅓ cup granulated sugar
3 tablespoons brown sugar
1 ½ teaspoons cinnamon
⅛ teaspoon nutmeg


Instructions

Preheat the oven to 300F. 

In a small bowl add the sugars, cinnamon and nutmeg. Stir together and set aside. 

Place cashews in a medium sized bowl. 

In a mixing bowl, beat the egg white until frothy. Add water and whisk together for another minute. 

Pour the egg white mixture over the cashews and stir until the cashews are coated. 

Add the sugar mixture and stir again until the cashews are fully coated. 

Spread the coated cashews in a single layer on a lined cookie sheet and roast, stirring occasionally, for about 25 – 28 minutes. 

Cool the pan on a wire rack completely before serving.
