I actually found this recipe on a peelie sticker I found on the top of the can if you can believe that. But here’s the thing, as I was reading the recipe I didn’t have all the ingredients on hand so I just adapted the recipe to the things I did have and what do you know, it turned out really, really good. So good we are all looking forward to having it again very soon.
Also, if you are looking for a new freezer meal recipe, this is an excellent candidate to add to your rotation as this recipe makes about {8} 12 ounce bowls of chili.
Have you tried Rotel before? Because I think it was the Rotel and all those little green chilies that made this recipe so darn good. Since discovering Rotel a few years ago, I have a become a BIG fan. If you have an ALDI store nearby they sell a knock of version that is equally as good.

Easy Chicken Chili Recipe Made with Costco Canned Chicken
Ingredients
2 Tablespoons Olive Oil
1 large onion, chopped
2 15 ounce cans black beans, drained and rinsed
3 10 ounce cans Rotel
2 12.5 ounce cans Kirkland signature chunk chicken breast, undrained
1 1/2 Tablespoons DIY taco seasoning
1 teaspoon ground cumin
Instructions
Heat the olive oil in a large stock pot and saute onions until soft and lightly browned. Stir in black beans, Rotel, chicken breast, taco seasoning and cumin. With the end of your spatula, break the chicken chunks so they resemble shredded chicken. Bring to a boil, reduce heat to medium low and simmer for 15 – 20 minutes.
Top with sour cream, shredded cheese, corn, red onions, crushed tortilla chips, whatever floats your boat. But make this recipe. It rocks!

What liquid did you use to bring it to a boil?

I did not add any extra liquid. The canned chicken is undrained, and there is the juice from the tomatoes. I was a little skeptical at first too, but it all works out. 🙂

I’ve made half — it was good. I used 2 cans of diced tomatoes and a little salsa that had green chilies in it.

Great recipe, I did not have any taco seasoning so just added 2 TBLS. chili powder. Quick, easy, yum!!!!
