Ingredients

Scale

1 large bunch of kale, rinsed, center stem removed, and chopped
3 tablespoons of unsalted butter
3 tablespoons of all-purpose flour
2 tablespoons cream cheese
1 tablespoon olive oil
1 clove garlic, minced
1/3 cup Parmesan cheese, grated
1/8 teaspoon ground nutmeg
1 cup milk {I used 2%}
½ cup heavy whipping cream
1 teaspoon unsalted butter to coat baking dish

Instructions

  1. Saute kale, olive oil, and garlic in a pan until wilted.  Set aside.
  2. Melt butter in a medium saucepan, over medium-low heat.
  3. Once melted, slowly whisk in the flower until nice and smooth.
  4. Add nutmeg, milk and whipping cream and stir well.  Reduce heat to a simmer until the sauce has thickened a bit {about 2 minutes}.
  5. Add cream cheese and Parmesan cheese and cook until the cheese has melted.
  6. Fold in sauteed kale, salt and pepper, and place the creamed kale mixture in a buttered dish {mine was 5×5 inches wide} and place on a cookie sheet.
  7. Broil on high until the cheese has slightly browned.
