Easy Squash Recipes – Roasted Acorn Squash with Parmesan Cheese

Ingredients

1 acorn squash halved, seeded, and sliced 3/4 inch thick
2 tablespoons olive oil
2 teaspoons Garlic Pepper Seasoning {I used Mc Cormicks}
1/4 cup Parmesan cheese, grated


Instructions

  1. Preheat oven to 400 degrees.
  2. Place sliced acorn squash in a large bowl and toss with 2 tablespoons olive oil and 2 teaspoons of garlic pepper seasoning.
  3. Place on a lined cookie sheet {I use silpats*} and sprinkle Parmesan cheese over the top of the acorn squash.
  4. Roast at 400 degree for 30 minutes, or until the acorn squash is tender.
  5. Serve as a side dish { I served this with Ritz Cracker Chicken}
