Easy Summer Recipes – Green Bean Salad

1 pound fresh green beans, trimmed and blanched
1 small sweet onion, sliced
4 oz cherry tomatoes
3 tablespoons olive oil
2 tablespoons white wine vinegar
1 teaspoon Dijon mustard
1/4 cup pine nuts, toasted
salt and pepper to taste


  1. In a large bowl combine the beans, onion and tomatoes.  Toss.
  2. In a separate bowl mix the olive oil, vinegar and mustard together.
  3. Pour over bean salad, add salt and pepper and sprinkle pine nuts over the top.
  4. Serve immediately.
