Easy Sunday Brunch Recipes – Baked Oatmeal with Blueberries

Ingredients

1 1/4 cup brown sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp cinnamon
2 Tbs butter, melted
3 eggs
1 1/2 cups milk {I used 2%}
4 1/2 cups rolled oats {NOT quick oats]
1 cup fruit, fresh or frozen {I used frozen blueberries}


Instructions

  1. Preheat oven to 350 degrees.
  2. Whisk together the milk, eggs and melted butter and set aside.
  3. Using a large bowl, incorporate all the dried ingredients, then stir in the milk mixture, and finally fold in the fruit.
  4. Spread into a greased 8×8 inch baking dish and bake at 350 degrees for 25-30 minutes, until the edges begin to brown.  Be careful not to over bake.
  5. Serve warm. {I like to add a bit of milk to mine.}
