Easy Zucchini Recipes – Baked Zucchini Fries

Ingredients

2 medium zucchini’s
1 cup bread crumbs
3 tablespoons flour
2 teaspoons Italian seasoning
2 eggs whites
1/2 teaspoon salt


Instructions

  1. Preheat oven to 425 degrees.
  2. Set out 4 bowls.
  3. Bowl #1 – Zucchini, cut up to resemble steak cut {wide} french fries.
  4. Bowl #2 – Combined the flour, Italian seasoning and salt together.
  5. Bowl #3 – 2 egg whites, beaten until frothy
  6. Bowl #4 – Bread crumbs
  7. Dredge the zucchini sticks in the flour mixture, dip into egg mixture, then dredge the zucchini in the bread crumbs.
  8. Lay the zucchini sticks flat on a baking sheet {lined with a silpat or parchment paper}.
  9. Bake for 5 minutes, turn over, and bake for an additional 5 minutes or until golden brown.

Notes

Serve with warm marinara sauce.
