Double Chocolate Zucchini Brownies

Ingredients

1 cup flour
3/4 cup whole wheat flour {I used whole wheat pastry flour}
1/3 cup baking cocoa {I used Hershey’s}
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg { I totally forgot to add the egg!}
3/4 cup sugar
3/4 cup brown sugar
1/2 cup plain yogurt
1/2 cup oil
1 teaspoon vanilla
2 cups shredded zucchini
1/2 cup chocolate chips
1/2 cup shredded coconut {optional}


Instructions

  1. Preheat oven to 350º
  2. Combine the first 5 ingredients in a large bowl and set aside.
  3. In a separate bowl combine everything else and stir well.
  4. Fold the wet ingredients into the dry ingredients and mix well.
  5. Spread the batter evenly into greased 9 x 13-inch or be like me and use parchment paper.
  6. Bake at 350º  for 30 -35 minutes or until a toothpick inserted into the center comes out clean.
