Pea Salad with Bacon and Chives

Ingredients

3 cup fresh peas, shelled
5 strips bacon, cooked, chopped
1/3 cup cheddar cheese, cubed
2 tablespoons fresh chives, chopped
4 tablespoons mayonnaise
2 tablespoon sour cream
1 tablespoon fresh mint, chopped
salt and pepper to taste.


Instructions

After shelling your peas, blanch them in boiling water for 2 minutes.  Place peas in ice cold water to cool.  Rinse. Combine remaining ingredients in a large bowl and mix together. Refrigerate 2 hours before serving.
