Hash Brown Waffles with Bacon and Cheese

  • 8 ounces frozen shredded hash browns, thawed
  • 2 eggs, beaten
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • vegetable oil or butter to grease your waffle iron


In a large bowl stir together the potatoes, eggs, cheese, bacon, salt and pepper until the potatoes are evenly coated.

Heat up waffle iron to medium high heat and brush with vegetable oil or butter. Spread 1 cup of the hash brown mixture evenly over the waffle iron close lid and cook until done {ours took about 4 minutes, but waffle makers can vary}.

This recipe makes 2 full size hash brown waffles.
