Morning Glory Muffins

Ingredients

  • 2 cups whole wheat flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • ½ teaspoons salt
  • ½ teaspoon ground ginger
  • 3 large eggs at room temperature
  • ½ cup light brown sugar
  • ½ cup raisins
  • ⅓ cup canola oil
  • ⅓ cup unsweetened applesauce
  • The zest of 1 orange
  • ⅓ cup orange juice
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 1 apple, cored and chopped
  • 2 cups shredded carrots
  • ½ cup unsalted pecans or walnuts, chopped

Instructions

Preheat oven to 375 degrees

Lightly grease a muffin tin or line with muffin liners. 

Get a medium sized bowl, mix the first 5 ingredients together and set aside. 

In a large bowl combine the remaining ingredients and stir together until combined. Slowly stir the flour mixture into the wet mixture just until all the ingredients are combined. 

Fill the muffin tins ¾ full with batter and bake for 22 – 25 minutes or until a toothpick inserted in the center of the muffin comes out clean.

This recipe makes about 15- 18 muffins {depending on the size of your muffin tin}.
