Old Fashioned Rhubarb Custard Pie

Ingredients

  • 3 cups rhubarb (, chopped)
  • 1 cup milk
  • 4 eggs
  • 1 cup sugar
  • 1 tablespoon flour
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • single pie crust

Instructions

  1. Preheat oven to 375 degrees.
  2. Place chopped rhubarb in a bowl and pour hot water over it and let it sit for 5 minutes. Drain. Pour rhubarb in the pie crust, sprinkle flour over the top and set aside. In a large bowl mix together the milk, eggs, sugar, vanilla and salt. Pour mixture over rhubarb and bake at 375 degrees for 15 minutes. Reduce temperature to 350 degrees and bake for an additional 30 to 45 minutes or until the custard is firm.
