Recipe: Banana Bread with Walnuts, Coconut and Chocolate Chips

Ingredients

1 1/4 cups unbleached all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
4 tablespoons unsalted butter {softened}
1 cup sugar
2  eggs
1/2 teaspoon vanilla extract
3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)
1/2 cup sweetened coconut
1/2 cup chopped walnuts
1 cup chocolate chips


Instructions

Preheat oven to 350 degrees.

In a large bowl combine the flour, baking soda, and salt and set aside.

In a second mixing bowl combine the bananas, eggs, vanilla, sugar and butter mix until smooth and creamy.

Add the flour mixture to the wet mixture and combine.  Fold in coconut, walnuts and chocolate chips.

Pour batter into a prepared pan.

Bake for 45-55 minutes or until a toothpick inserted into the center of the bread comes out clean.

Let the bread cool in the pan for 5-10 minutes then turn the bread out onto  a wire rack.

Cool. Slice and serve.
