Recipe – Blackberry Cobbler

4 cups blackberries
1 tablespoon lemon juice
1 large egg, beaten
1 cup sugar
1 cup flour
6 tablespoons butter, melted


  1. Butter an 8×8 dish and load it up with blackberries.
  2. Pour lemon juice over blackberries.
  3. In a separate bowl combined the flour, sugar and beaten egg until nice and crumbly.
  4. Pour melted butter over flour topping.
  5. Place berry filled dish of goodness on a cookie sheet and bake for 35- 40 minutes or until the juices are bubbly and oozing over the dish.
  6. Cool.  Serve with a big ole’ scoop of vanilla ice cream.
