Salt Potatoes Recipe

5 pounds new potatoes
1 1/2 cups kosher salt
8 tablespoons butter, melted
1/4 cup chives, chopped


Fill a large pot with 3-4 quarts of water. Slowly stir in the salt until it settles on the bottom of the pot. Thoroughly wash potatoes {do not cut them!}, place them in the pot and bring to a boil.

Reduce heat and simmer for about 15 minutes or until potatoes are tender. Remove from heat and drain. Pour melted butter over potatoes, sprinkle with chives and serve piping hot.
