Slow Cooker Beef & Broccoli

Description

We love a good beef and broccoli stir fry for dinner. We tend to make stir fry at least once a week. It’s kind of my go-to meal. So when the HH decided to make it even easier and cook it in the crock pot, I had to pat him on the back. Easier and just as delicious. If you love beef and broccoli {or even if you don’t}, this recipe offers a healthy, quick meal that my whole family loves! Savory beef, a delicious sauce and some tender broccoli {or any other veggies you want to toss in}? Yum!


Ingredients

1 1/2 pounds flank steak, sliced thin and cut into 2-inch pieces
1 cup beef broth
1/2 cup soy sauce
1/3 cup brown sugar
1 tablespoon sesame oil
1 tablespoon minced garlic
4 cups broccoli florets
2 tablespoons cornstarch


Instructions

Place steak, beef broth, soy sauce, brown sugar, sesame oil, and garlic in a greased slow cooker. Stir a bit to coat beef, cover and cook on low for 4-5 hours or high for 2-3 hours.

About 30 minutes before the beef is done, whisk corn starch and 2 tablespoons of cold water until the corn starch is dissolved. Pour into the slow cooker and stir. Re-cover and cook another 20 minutes.

A few minutes before you’re ready to serve your meal, place a steamer basket over boiling water and steam broccoli, covered, until fork-tender, about 5 minutes {you can also do this in a steamer or in the microwave. Anyway you want to get fork-tender broccoli!}. Drain broccoli and stir it into the crock pot. Serve over rice.
