Soft and Moist Molasses Gingerbread

Ingredients

  • 2 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 1 tsp. salt {I used ground sea salt}
  • 1/2 cup melted shorting {I used Crisco} or butter
  • 1 egg, beaten
  • 1 cup molasses
  • 1 cup hot coffee or water

Instructions

Preheat oven to 375 degrees.

Grease a 9 x 13 baking pan and set aside.

In a bowl, sift together the flour, sugar, baking soda, baking powder, ginger cinnamon and salt and set aside.

In a large bowl mix together the melted shortening, egg and molasses until nice and smooth.

Slowly stir in half of the flour mixture, then half of the hot coffee, then the remaining flour mixture and the rest of the hot coffee and stirring together until smooth.

Pour batter into the prepared baking pan, smooth out and then bake at 375 degrees for 25 minutes or until a toothpick inserted into the center comes out clean.

Cool on a wire rack, slice, and sprinkle with powered sugar.
