Raspberry Buckle

Ingredients

1/2 cup unsalted butter, room temperature, plus more for baking dish
1 cup granulated sugar
3 large eggs
1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
1 cup fresh {or frozen} raspberries
powdered sugar for dusting


Instructions

  1. Preheat oven to 350 degrees.
  2. Butter a 9-inch baking dish.
  3. Cream the butter, sugar and eggs together with your mixer.
  4. Slowly add the flour, salt and baking powder until well incorporated.
  5. Pour the batter into your baking dish and carefully place the raspberries on top.
  6. Bake 40 -45 minutes or until lightly browned and a toothpick inserted into the center comes out clean.
  7. Dust with a bit of powdered sugar and serve with a big fat scoop of ice cream.
