2 cups all-purpose flour
3/4 cup sugar
11/2 teaspoons baking powder
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 teaspoon baking soda {15 Cool Uses for Baking Soda}
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup shortening
3/4 cup orange juice
2 eggs
1 tablespoon vanilla extract
2 cups frozen cranberries


  1. Place all the ingredients except the cranberries into a mixing bowl and stir everything together for about a minute or until all the ingredients are combined.
  2. Fold in cranberries, and use a 3 tablespoon cookie scoop to scoop the batter into line muffin tins.
  3. Bake for 18 minutes or until the tops have just browned.
