I’m already a sucker for pound cake, but this recipe for toasted coconut pound cake just takes it to the next level. Perfect for those times when you need to make something ahead of time, or if you are having guests over and want to have a little slice of sweetness on hand to offer over coffee and tea.
I made this recipe yesterday so we could it enjoy it for breakfast this morning on Christmas Eve, and just like most moist pound cakes, it tastes even better on the second day. 😉

Toasted Coconut Pound Cake
Ingredients

For the cake:
1 1/2 sticks unsalted butter, softened
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar
1 1/2 teaspoons vanilla
3 large eggs
1 cup buttermilk
1 cup sweetened shredded coconut flakes
For the glaze and topping:
1 cup powdered sugar
3 tablespoons buttermilk
1/4 cup sweetened shredded coconut, toasted for topping
Instructions
Preheat oven to 350 F. Thoroughly grease and flour a large loaf pan {or 3 mini loaf pans}, and set aside.
In a small mixing bowl, whisk flour, baking powder, and salt together. In a stand mixer with paddle attachment, beat butter and sugar on medium-high until fluffy.
Add vanilla and mix until incorporated. Add eggs one at a time, beating well after each addition.
Turn mixer down to low and slowly add in flour mixture and buttermilk in this order: 1/2 flour mixture, 1/2 buttermilk, remaining flour mixture, remaining buttermilk. Beat until combined. Fold in coconut.
Pour batter into pan and bake 1 hour or until a toothpick inserted into the middle comes out clean.
While cake is baking, mix powdered sugar and buttermilk. Remove cake from oven and let cool in pan for 20 minutes before transferring to wire rack to cool completely. Pour on glaze and top with toasted coconut before serving.

Hello Mavis, the cake looks delish. I had a book suggestion for you – Margot by Jillian Cantor. It’s similar to your favorite book of the year as it’s a fictional follow up/ deeper look at a well known story. Margot being Anne Frank’s sister and her fictional life after the war if she had lived.

I will try the coconut cake also……question? How did you toast the coconut? Is the coconut that is put in the cake toasted or just out of the bag?

We toast the coconut on a baking sheet in the oven. About 15 seconds under the broiler usually does the trick. 🙂
