What are your favorite summer go-to recipes to bring to a gathering or a potluck style event? Do you have some tried and true recipes that always seem to be a hit no matter the occasion?
While I love trying new recipes, there are some I know are real winners and have gotten rave reviews over the years.
Here’s my go-to list:
Appetizers
Caprese Skewers or Homemade Salsa and Chips.
Salads
Broccoli Cashew Salad or Carol’s Creamy Grape Salad.
Side Dish
Main Dish
New England Style Baked Beans, Crock Pot full of grilled Aidell’s Weenies {sliced lengthwise} or a bucket of KFC Chicken.
Dessert
Strawberry Shortcake, Rocky Road Brownies or a Strawberry Rhubarb Pie.

Definitely the broccoli salad though I use sunflower seeds rather than nuts due to allergies in tge family. I make a black bean corn salsa a lot. Cowboy caviar some call it, but it works with chips but also as a salad. Sour Cherry crisp is a new addition since discovering my niece has a cherry tree with fruit going to waste.

Key Lime Pie is my very favorite summer recipe! I always offer to bring it to picnics.

Always sweet/sour cucumbers. Dissolve: 1/2 C each vinegar, water & sugar (I bring it to a simmer). 1 English cucumber very, very thinly sliced (I use a mandolin.) a handful of sliced green onions, or chives. In a large bowl add about half of the cucumbers, half onion/chives, sprinkle with a bit of salt & pepper; repeat. Pour liquid over. Refrigerate a couple of hours. Stays well in frig for days. Easy Peasy make ahead.

Mexican street corn salad for a side dish and Oreo pudding fluff for a dessert are my favorite things to take to church potlucks and picnics.

Jimmy buffets Mac and cheese is always requested year round. This 4th I need to bring a dessert as well. So I’m thinking some kind of fruit crunch sounds good. Maybe peaches as they’re on Sale here.

Carrot and peanut salad: grind carrots and peanuts, stir together with Miracle Whip. I only bring this to potlucks because my Dave won’t eat it but it does go fast when I bring it. I think it stands out because it is so different from what most people bring.

Chocolate pudding, cream cheese (2 packages), and cool whip dessert (lasagna). I use graham cracker crumbs so I don’t need to turn the oven on.
No bake chocolate cookies with oats, unsweetened cocoa powder, peanut butter, and coconut.

Strawberries, watermelon and feta cheese. Drizzled with a good quality balsamic. No one else brings it, but everyone tries it.
I want to try a buttermilk pie, apparently it makes it’s own crust.
Also, I want to try a no bake Dr Pepper pie. It’s topped with cherries.

Mississippi Mud Cake (a brownie type cake with pecans, mini marshmellows on top of that while still warm, a cocoa type icing on top of that). Very low calorie as you can see. Always the first to go at family gatherings etc.
