What have you been eating lately? Anything good?
I just realized I haven’t done a food update in over a month. How did that happen?
I went to upload some photos and noticed I’ve only taken a handful of pictures and all the pictures I did take were of actual meals… Not the pickety bits and glorious amounts of fruit we’ve mostly been feasting on lately.
Oh well. I guess I’ve had other things on my mind.
One thing we’ve been eating pretty consistently this summer are avocados. And lot’s of them.
I even added avocados to a bowl of leftover teriyaki chicken and rice. 😉
A seven layer dip seems like a party food, doesn’t it?
But when you’ve got copious amounts of refried beans in the freezer and all the other ingredients on hand, it suddenly becomes a meal.
Fact: The HH has discovered Tostito’s “Scoops” and loves them. Even I think they’re kind of fun.
Bacon, lettuce, tomato and avocado.
Turkey, avocado lettuce, tomato and cheese.
I love avocados, but not enough to buy an avocado chair.
Mini burgers and Wrap City chips.
And last but not least, weenies, chips and a simple salad. Is it still called a salad if there’s no lettuce? One of these days I’m going to make a real meal… Like a lasagna from scratch. Just not anytime soon. 😉

My sense of taste is off due to health issues so I have been hit or miss with food flavors. Lots of soups on the menu and for some reason baked potatoes with sour cream and butter are working out well.

Oh my we have been like we just discovered avacados! I have had avacado dip many times but have never tried just plain avacados then I entered the 21st century and after prodding from my granddaughter I made avacado toast and the world has changed for good. I swear I could have it every morning with spices and pickled onions. Everyone of your “meals” looked delicious to me to say the least. Have a great weekend we will be waiting for your post come Monday morning.

Oatmeal every morning. I flatten some chicken breasts and marinate, then grill them. With chicken breast I make big salads for lunch or dinner with strawberries added, fresh spinach, pecans. Same chicken breast salad with roasted beets and sweet potatoes, tomatoes, green onions, no strawberries. Or grilled salmon, quinoa, fresh vegies. Also lots of fresh fruit. Once a week I make something with extra lean ground beef. I do snack on Harvest Snaps green peas or Sun Chips.

In Greece, their Greek salads contain no lettuce, so yes you are eating salad!

Your meals look amazing, and I think you should go ahead and get that avocado chair! We’re in easy meals mode – my youngest just finished baseball season, but we’re still going to some of his friends’ games, plus other fun summer stuff that keeps us away from home a lot.

Lots of fruit! Peaches, melons, berries, strawberries, and blueberries mainly. Simple pastas with fresh herb, greens, and beans. Corn on the cob. Summery food!

I’m with you. Just made chicken burgers with a salad. Yesterday it was pulled chicken with barbecue sauce and corn on the cob. If it takes longer than half an hour to make, my heart’s not in it.

Love those Scoops but I have to say Trader Joe’s chips are the best, even better than Cape Cod chips.

Salad season! Without lettuce, thank you very much. My favorite homemade dressing: equal amounts of lemon juice and olive oil with a dash of oregano. I call it Greek but I have no idea if it really is.

I find myself using lettuce in salads less and less!!!

Yep, it doesn’t need lettuce to be a salad. Tuna salad, egg salad, fruit salad all happen without lettuce too.

Your meals look delicious. I love the tostitos scoops because they work so well for chunky dips. I wonder if that avocado chair is comfortable.
