The HH has been in charge of meals lately and I think he’s doing pretty good.
We tried the Mama Mancini’s jumbo beef meatballs from Costco. No bueno. I had one bite and that was enough for me.
They got a double thumbs down from the both of us. Maybe now my husband will stop buying the {long shelf life} prepared meaty meals in the refrigerated section. Maybe not.
The French garlic bread croissant he served was… Interesting.
Trader Joe’s teriyaki chicken and rice. Always a winner. Or so I thought.
The HH finally fessed up and said it is his least favorite “take out” freezer meal they sell. OH MY WORD!!! Why did we buy it then? We have eaten this at least 40 times over the past few years, and now he tells me?
Umm… If I didn’t like something, I would have said so on the first bite. Not three years later. But hey, that’s just me.
I requested tuna salad and avocado for lunch… And got it. 🙂
Sweet potatoes, eggs and avocado… Yes! Pork breakfast sausage? No. But then again, the only pork I really seem to like is bacon.
Have you tried Costco’s frozen stuffed shells? At $10.99 {or $11.99?} I think they’re pretty good. And a great deal too.
In my opinion it’s way cheaper to buy a bag of the stuffed shells {and have enough for 4-6 meals} then to buy all the ingredients separately, make them and then freeze them in meal size portions.
Some freezer meals from Costco are winners and some aren’t. I just wish the portion sizes were smaller. But hey, you can’t have everything, right?
We popped by the neighborhood St. Patrick’s Day potluck party and had a great time. We brought along 2 big apple galettes that we had made to share.
I was going to buy the ingredients to make caprese skewers {which are always a hit} but decided to crack open 3 jars of my homemade apple pie filling instead.
The HH had tossed some corned beef, cabbage, potatoes and some carrots in at Crock Pot earlier in the day but by the time we got back home it was too late to eat so we saved it for the next day.
And the day after that too. 🙂 Leftovers rule!
Avocado toast is always a good idea.
And so is a plate full of pickety bits.
And last but not least, his and her lunches. I bet you can guess who ate what. Ha!
It was a pretty good week in the meal department if you ask me. We stayed away from the stores and probably will next week too. I’m kind of loving that my husband is taking care of the meals lately. I think he’s doing pretty good!

I think HH is doing great! I can’t even get mine to participate in planning a meal let alone making it. But after 40 plus years of marriage, I guess I am used to it. Plus he’s pretty cute!

Return the unused portion of meatballs to Costco. They will refund your money.

We have never found a good meatball in any brand. I don’t understand why they are so popular. Our SIL Sicilian Mom makes fantastic meatballs as big as baseballs!

My hubby is the same (with not telling me that he doesn’t like something). Now, I just notice whether or not he eats any of the leftovers – if he doesn’t eat any of them, then I know he doesn’t like it. (we typically have leftovers as I like to make a lot . . . LOL) I think he just doesn’t want to hurt my feelings . . . but I would rather know especially when I am making something that I think he likes. LOL

Yes to this. Particularly if it takes extra steps/time or not standard in the pantry ingredients to prepare.

My daughter really likes the stuffed peppers and the Shepherd’s pie from Costco for those busy days. They’re fresh so need to be used quickly. They’re also huge but she’s a family of four and leftovers do not go to waste.

I was able to save a bag of bite-sized beef meatballs by adding them to a beef-based vegetable stew. They had an unpleasant spongy, bouncy texture when left whole for meatball subs. Quartering them for soup allowed the broth to permeate throughout and made the bite much more tender.

Many frozen meatballs contain soy which gives them a weird texture. Target has some without soy and they are grass fed beef as well.
Rao’s has some I want to try out.
