If you ever find yourself with a yellow cake mix, strawberries, vanilla pudding and fresh whipping cream on hand all at the same time, I strongly encourage you to make this strawberry pudding cake.
We first enjoyed this cake at a neighbors backyard BBQ party. In fact I hadn’t even finished my slice before asking my neighbor for the recipe. Yes, it was THAT GOOD!
And well, to make a long story short, The Girl and I have been making this cake for over 20 years now and not only is it my family’s all time favorite cake, this strawberry pudding cake is a crowd pleaser as well.
It’s the perfect dessert for all those local strawberries that fill the roadside stands this time of year. And great for entertaining as well.

Strawberry Pudding Cake
Ingredients
- Yellow Cake Mix
- 1 small box Instant Vanilla Pudding
- 1 lb Fresh Strawberries
- 1 pint Fresh Whipping Cream
- 1 teaspoon Vanilla Extract
- 2 tablespoons Sugar
Instructions
Follow the directions on the back of the box of cake mix to make {2} 8-inch round cakes.
While the cake is baking, prepare vanilla pudding according to the directions on the box and set aside.
Once the cake has cooled slice the cake rounds in half so you have {4} layers of cake.
Place 1 layer of cake on a cake plate and spread about 1/4 cup vanilla pudding over the top and add a layer of strawberries over the pudding.
Put in a second layer of cake and repeat with pudding and strawberries.
Then you add a 3rd layer and repeat.
Add the fourth layer to the top of the cake and frost the cake with fresh whipping cream.
Slice a few strawberries and arrange them around the base of the cake. Then place 3 strawberries on the top of the cake in the center.
Chill until ready to serve.

Looks yummy! One question, what is the sugar and vanilla for? Are they added to the cream when you whip it? I am going to make this for our BBQ on the 4th. TIA.

Oops. Yes, whip the cream and add vanilla and sugar towards the end of the whipping process. 😉 I LOVE this dessert.

We make a similar cake at our house, but I whip the instant vanilla pudding with whipping cream instead of milk and it comes out thick enough to really hold up between those cake layers. It’s also yummy with a yellow cake and chocolate frosting, we call that custard cake but the “custard” is really just the pudding and whipping cream. Love your recipes!
