Quick and Easy Strawberry Shortcake With Chocolate Chips


  • 1 package {16 oz} strawberries (, hulled and quartered)
  • 1/4 cup plus 2 tablespoons sugar (, divided)
  • 2 1/2 cups all-purpose baking mix {like Bisquick}
  • 1/2 cup mini chocolate chips {I used semi-sweet}
  • 2/3 cup buttermilk
  • 1/4 cup unsalted butter (, melted)


  1. Preheat oven to 425F. Toss half the strawberries with 2 tablespoons sugar and set aside.
  2. In a mixing bowl, stir together baking mix, chocolate chips, 1/4 cup sugar, buttermilk, and butter until blended. Using a 1/3 cup measure, scoop 6 shortcakes onto an ungreased baking sheet and bake until golden brown or about 15 minutes. Cool completely on wire rack.
  3. Mix sugared strawberries and plain strawberries. Cut shortcakes crosswise in half. Spread strawberry pieces on bottom half and top with whipped cream. Top with other half of shortcake. Place a sliced shortcake on a plate, add fresh whipping cream and strawberries and serve. Enjoy!
