Crockpot Shredded BBQ Chicken

I’ve made a lot of chicken recipes in my crockpot. I’ve made a lot of BBQ chicken recipes outside the crockpot. Combining them leads to some of the very best shredded BBQ chicken I’ve ever had. EVER. The ingredient list seems too simple for that statement to be true, but it is. It packs a pretty powerful flavor punch. And, of course, because you are cooking it in a slow cooker, it’s a snap to make. Makes me love it even more!

Crockpot Shredded BBQ Chicken recipe

Ingredients

2 lbs boneless, skinless chicken breasts
1 cup of your favorite BBQ sauce
1/4 cup Zesty Italian dressing
1/4 cup brown sugar
1 tbsp Worcestershire sauce

Crockpot Shredded BBQ Chicken

Directions

Spray a crockpot with cooking spray and place chicken breast in the bottom. In a small bowl, mix all remaining ingredients and then pour over chicken. Cook on high for 4 hours.

Crockpot Shredded BBQ Chicken

Remove chicken, shred {I used a stand mixer to quickly shred it} and then place back in crockpot to cook for an additional 10 minutes {this helps it soak us the sauce and makes it extra tender and juicy. Yum!}. Serve over rice or on buns. Enjoy.

Slow Cooker Chex Party Mix RecipeIf your oven is anything like mine around the holidays, it’s constantly full and pretty much overworked for a full month. Sometimes I just want to whip up a quick batch of Chex Mix for my family or guests and my oven {and microwave even} are already being {over}used. What’s a girl to do? Well turn to her handy dandy slow cooker, of course!

Did you know you can make Chex Party Mix in your CrockPot? Well you totally can. It tastes just as delicious, but doesn’t require the use of your oven. So you can go on with your frenzied holiday baking uninterrupted. It’s awesome! Here’s how:

chexIngredients

3 cups Corn Chex cereal
3 cups Rice Chex cereal
3 cups Wheat Chex cereal
1 cup mixed nuts {I used cashews and almonds}
1 cup pretzel pieces
6 tablespoons butter, melted
2 tablespoons Worcestershire sauce
1 1/2 teaspoons seasoned salt
3/4 teaspoon garlic powder
1/2 teaspoon onion powder

Slow Cooker Chex Party Mix RecipeDirections

In slow cooker, mix together the cereal, nuts, and pretzels. Whisk together remaining ingredients and pour over cereal mix in slow cooker. Mix well.

Cook uncovered on high for 90 minutes, stirring frequently {your house will smell amazing!}. Then spread Chex Mix on paper towels to cool, then store in airtight container.Slow Cooker Chex Party Mix Recipe

Slow Cooker Coconut & Almond Rice PuddingI’m sure I sound like a broken record every time I post a good recipe. “It’s sooo good.” “Try it now.” “It’s da bomb!”

But then, of course I’m going to go on and on about how much I love it. If I’m posting it, it’s because it was awesome. Why on earth would I post a junky, gross-tasting recipe for you guys? I wouldn’t. Although I’ve made a bunch of those gross recipes through the years, I just keep those to myself and only share the gems! So when you hear me go off about how totally awesome a recipe is, know that it’s been tested and loved by me {and/or my family}.

Kinda like this rice pudding recipe that’s awesome.

cinnamon sticksIngredients

1/2 cup basmati rice
1 can light coconut milk
1 cup milk
1/2 cup water
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup raisins
1/4 cup almonds, chopped and toasted
1/4 cup shredded coconut
1/4 cup agave nectar, divided

Directions

Add rice, coconut milk, milk, water, vanilla extract, almond extract, cinnamon, and nutmeg to the slow cooker. Cook on low for 4 hours or high for 2 hours. Mix in raisins, almonds & coconut.

Serve with a drizzle of agave nectar and a few coconut flakes on top.

Slow Cooker Mashed Potatoes with Bacon and Chives

I’m totally preparing for Thanksgiving this year so on the big day, I’m not fumbling around the kitchen like a mad woman. Okay so there will still be some of that, but I’m trying to tone it down with cooking a bit the night before and using my crockpot.

Of course you have to have mashed potatoes on Thanksgiving. The HH and Monkey Boy would riot if I didn’t. So this way I just set it & forget it while I have 6-8 hours to cook everything else. Perfect.

Slow Cooker Mashed Potatoes with Bacon and Chives

Ingredients

5 pounds of potatoes, peeled and cubed
1 1/2 cups chicken broth
3 tablespoons butter
2 cloves minced garlic
1 cup sour cream
4 ounces of softened cream cheese
4 pieces of cooked bacon, crumbled
2 tablespoons fresh chives

Directions

Place potatoes, broth, butter and garlic in a slow cooker. Cook on low for 6 hours.

Test the potatoes with a fork, and if soft, add cream cheese and sour cream. Mash to desired consistency with a potato masher. Garnish with bacon and chives, and serve hot.

Slow Cooker Pot Roast Soup Recipe

I made a pot roast for dinner a while back and shockingly there were a bunch of leftovers so I whipped up a pot roast soup in the crock pot. I mean really, we all know pot roast taste better on the second day, right? The HH had 3 bowls it was so good. :) Yep, it’s a keeper for sure.

Ingredients

1 -2 pounds left over pot roast, cooked and cubed
8 cups beef broth
1 14 oz can diced tomatoes with green chilis
1/2 cup dried pinto beans, washed
1/2 cup dried white navy beans, washed
1 carrot, chopped
1 onion, chopped
2 stalks of celery, chopped
1 teaspoon dried oregano
2 teaspoons pepper
1 tablespoon dried parsley

Directions

Toss everything in the crock pot and cook on low for 8 hours or high for 4 hours. Serve with some crust bread and you’re good to go.
